This salad is filling, comes together really quickly, and is great for anyone who is vegan. All you need to do is throw together avocados, tomatoes, cucumbers, red onion, and chickpeas together in a bowl. Pour over a vinaigrette, and you are ready to serve!

Greek Salad

Greek salad is great because there is so much flavor, and is really filling. In a bowl, combine lettuce, thinly sliced red onion, tomatoes, cucumber, feta, and whole olives. Sprinkle over salt and oregano, and drizzle with olive oil. If you have the time, you can also throw in grilled chicken for an even heartier meal.

Tacos

Tacos are quick to throw together and can be made vegetarian or vegan easily if you have guests with dietary restrictions. To make it even easier, make lunch into a buffet! Put out tortillas, beans, rice, vegetables, and cheese. You can also add any meat and guacamole if you have time.
