Filet Mignon with Portabella Mushrooms

Mushrooms are all around the markets at the moment and this is a great opportunity to enjoy them with some tender filet mignon. You can have this dish as it is with just a piece of fresh bread or serve it with a side dish of potatoes or white rice.

Ingredients:

  • 600 grams of filet mignon
  • 500 grams of chopped portabella mushrooms
  • 1 chopped shallot
  • 25 grams sour cream
  • 2 tablespoons mustard
  • 3 tablespoons olive oil
  • Salt and pepper

Instructions:

  1. Slice the filet mignon into 1.5 cm slices.
  2. In a large pan warm the olive oil and then add the filet mignon and fry for 4 minutes on each side.
  3. Add in the shallot and stir for 2 minutes before adding the mushrooms. Stir well and cook for 5 minutes.
  4. Add in the sour cream and mustard and stir well. Season with salt and pepper.
  5. Cover the pan and cook on medium heat for 20 minutes, stirring from time to time.
