Mushrooms are all around the markets at the moment and this is a great opportunity to enjoy them with some tender filet mignon. You can have this dish as it is with just a piece of fresh bread or serve it with a side dish of potatoes or white rice.
Ingredients:
- 600 grams of filet mignon
- 500 grams of chopped portabella mushrooms
- 1 chopped shallot
- 25 grams sour cream
- 2 tablespoons mustard
- 3 tablespoons olive oil
- Salt and pepper
Instructions:
- Slice the filet mignon into 1.5 cm slices.
- In a large pan warm the olive oil and then add the filet mignon and fry for 4 minutes on each side.
- Add in the shallot and stir for 2 minutes before adding the mushrooms. Stir well and cook for 5 minutes.
- Add in the sour cream and mustard and stir well. Season with salt and pepper.
- Cover the pan and cook on medium heat for 20 minutes, stirring from time to time.
