Grilled Romaine Salad for Your Next Cookout

Are you planning on hosting a cookout or dinner with your family and friends? Well, there’s no better way to get the party started than with a delicious salad to whet your guests’ appetite. Here’s how you can make a grilled romaine salad that’s perfect for avocado lovers.

Ingredients

  • 1/4 cup Parmesan cheese
  • 1/4 teaspoon black pepper
  • 1 avocado
  • 1 clove garlic
  • 1 teaspoon Dijon mustard
  • 1 loaf focaccia
  • 1 teaspoon Worcester sauce
  • 1 head romaine lettuce
  • 1 1/2 teaspoons Kosher salt
  • 2 tablespoons olive oil
  • 2 tablespoons mayonnaise
  • 2 tablespoons lemon juice
  • 2 teaspoons capers

Instructions:

  1. Preheat grill to medium-high.
  2. Blend together avocado, garlic, lemon juice, mayonnaise, mustard, oil, 3/4 teaspoon salt, and 1/3 cup water. Add Worcester sauce and pepper and blend until smooth.
  3. Brush both sides of the focaccia with olive oil. Sprinkle with 1/2 teaspoon salt.
  4. Grill the focaccia for 3 minutes per side, until the edges are crispy.
  5. Brush the romaine with oil and grill for 3 to 4 minutes.
  6. Place the romaine on a serving platter and sprinkle in salt. Drizzle with salad dressing before serving.
