This Gluten Free Ramblejack Recipe is the Best

Ramblejacks are very similar to flapjacks, a traditional British oat-based cake, only with a delectable layer of date paste in the middle, and a drizzle of chocolate on top. Check out this recipe, which is super easy and produces incredible results every time.

Ingredients (to make 12)

  • 2 cups of gluten-free oats
  • 1 cup of unsalted butter
  • 4 tablespoons of golden syrup
  • 3 tablespoons of date paste
  • 1/3 cup of dark chocolate
  • 1/2 cup of chopped mixed nuts

Instructions

  1. Heat the butter and golden syrup in a pan.
  2. Once the butter has melted, add the oats and nuts. Stir to ensure everything is well coated and cook for 5 – 10 minutes.
  3. Remove the pan from the heat, line a baking tray with baking paper and spoon the mix onto the tray. Bake in an oven heated to 350 degrees F for 15 – 20 minutes.
  4. Once the mix has cooked and cooled, slice it into bars. Cut each of these in half horizontally, spread some of the date paste across the middle, and then sandwich together again.
  5. Melt the dark chocolate in a microwave and then drizzle over the top of each bar.
