This Broccoli Salad is Packed With Nutrients

Ever feel like you’re craving some green goodness? Then look no further than this broccoli salad. Simple, yet tasty and full of healthy nutrients, pair it with some roasted meat, a soup, or just enjoy it as it is.

Ingredients

  • 2 cups of raw broccoli
  • 1 clove of garlic
  • 1 tablespoon of olive oil
  • 1 teaspoon of balsamic vinegar
  • 1 teaspoon of honey
  • 1 tablespoon of pumpkin seeds
  • Juice of 1 lemon
  • 12 cherry tomatoes

Instructions:

  1. Finely slice the broccoli and place in a large salad bowl.
  2. Dice the garlic clove and add this to the broccoli.
  3. Halve the tomatoes and add these to the bowl.
  4. Mix the oil, honey, vinegar and lemon juice together to make a dressing. Dress the salad.
  5. Sprinkle over the pumpkin seeds and serve.
