Couscous and Feta Salad
Couscous is a healthy and quick meal option and can be used as the base for so many meals. It also travels well, so is ideal for lunch on the go. Simply cook some couscous, and then stir through some tomato, feta, lettuce, and pumpkin seeds.
Potato and Tuna Salad
If you batch cook some potatoes they will store well in the fridge, so are a great lunch option. After you’ve cooked them add some extra virgin olive oil. Then for each portion of lunch, add some tuna, some canned sweet corn, some spinach, and a bit of mayonnaise.
Rice and Chickpea Salad
Rice is also great when batch-cooked, stored in the fridge, and eaten cold in salads. To the cooked and cooled rice, add some chickpeas, garden peas, scallions, finely shredded red cabbage, and a teaspoon of pesto.
