Stir fries are such a great choice for a meal as they’re super easy and quick to whip up while also being delicious and healthy. This recipe is packed with healthy veggies, including wonderful broccoli which pairs perfectly with creamy, savory, crunchy cashew nuts. To bring it all together, there is a fresh, zingy sauce.
Ingredients:
- 1 head of broccoli
- 1 large white onion
- 1 large carrot
- 2 bell peppers (any color)
- 2 cups cashew nuts
- Noodles or rice, to serve
For the sauce:
- 1 tablespoon sesame oil
- Juice of 1 small lime
- 1 tablespoon soy sauce
- ½ teaspoon chili seeds
- 2 cloves of garlic
- ½ cup cashew nuts
Instructions:
- Make the sauce by crushing the cashew nuts up and then add to a small bowl to mix with the sesame oil, lime juice, soy sauce, and chili seeds. Crush the garlic into the bowl, stir it, and then cover and put to one side.
- Chop the broccoli head into bite-sized pieces, finely slice the onion, and dice the bell peppers. Grate the carrot and squeeze out the excess liquid.
- Heat some oil in a large wok. Once hot, add the broccoli and stir fry for 5-10 minutes.
- Add the onion and bell pepper and season to taste with salt and pepper. Continue to stir fry for a further 5-10 minutes.
- Add the grated carrot and cashew nuts and stir fry for another 5 minutes.
- Give the sauce another stir and then add to the wok. Stir fry for 5 more minutes.
- Serve hot over freshly cooked noodles or rice.
