This Tomato, Spinach, and Olive Frittata is a Perfect Light Lunch

Eggs are a fantastic ingredient to have around. They are high in protein and super healthy, and the range of dishes you can make with eggs seems to be endless. A perfect example of this is in the form of frittata, which is like a quiche without the crust. This recipe uses tomatoes, olives, and spinach for a deliciously savory and fresh combination of flavors.  

Ingredients (to Serve 4):

  • 6 eggs
  • ½ cup milk
  • 2 cups cherry tomatoes
  • 1 cup pitted black olives 
  • 3 cups fresh spinach
  • ½ tablespoon dried oregano
  • ½ tablespoon dried basil
  • 1 teaspoon smoked paprika 
  • Salt and pepper, to taste
  • Butter, for greasing

Instructions:

  1. Preheat your oven to 340℉.
  2. Quarter the cherry tomatoes and halve the olives. 
  3. Crack the eggs into a jug and whisk until smooth.
  4. Pour in the milk, add the oregano, basil, paprika, salt, and pepper, and stir well.
  5. Grease an oven dish with a little butter.
  6. Transfer the egg mixture to the oven dish. Add the tomatoes, olives, and spinach and stir until evenly spread.
  7. Place into the oven for 20 minutes.
  8. Check if the frittata is cooked by giving it a shake to see if the middle is set or not – if it wobbles then pop it back in the oven for another 5 minutes.
  9. Leave to stand for 5-10 minutes before slicing up to serve.
