Making Crepes is Easier Than You Think

People have this association that crepes are fancy. Maybe it’s because they’re French but the reality is that they’re quite easy and affordable to make. Seriously, they’re way less intimidating than you might think. Here’s how to make them come together for your next brunch to impress your friends and family.

The easy part is making the batter. You just need:

  • 1 cup all-purpose flour
  • 2 eggs
  • 1/2 cup milk
  • 1/2 cup water
  • 1/4 teaspoon salt
  • 2 tablespoons melted butter

Combine all of the ingredients in a large mixing bowl. Start with the flour and eggs, add the milk and water, and finish off with the salt and butter. You’ll want to whisk it together until the batter is smooth and rather liquidy, more so than with pancakes.

Now comes the part that people tend to be intimidated by: pouring and flipping. These tips will help.

  • Keep the heat medium-high: not too high or else the batter won’t have time to spread over the whole pan. Make sure the pan is greased before each crepe you make.
  • Pour in the batter and tilt the pan to cover its entire surface. If the batter isn’t liquidy enough to do so, add a splash of water to it. Let the crepe cook until bubbles form and the edges start to lift up. Flipping is easy! Just use a spatula to loosen the crepe and turn it over. As long as you greased the pan well enough, it should be no problem.

Serve hot with your favorite toppings and see the looks of admiration on the faces of everybody you’re eating with. They’ll never know how easy it was.
