Peanut Soba Noodle Salad

Ingredients:

  • 1/2 cup salted peanuts
  • 1/2 cup sliced scallions
  • 1/2 cup fresh cilantro
  • 1/3 cup peanut butter
  • 1 medium Fresno chili
  • 1 tablespoon granulated sugar
  • 1 teaspoon sriracha
  • 2 tablespoons rice vinegar
  • 3 tablespoons soy sauce

Instructions:

  1. Boil a large pot of water over high heat.
  2. Cook the noodles according to the package instructions. Dry them and then transfer them to a large bowl.
  3. Whisk the peanut butter, soy sauce, sugar, sriracha, rice vinegar, and 1/3 cup water together in a bowl.
  4. Pour the peanut butter mixture over the noodles. Top off with cilantro, peanuts, scallions, and chile before serving.
