Simple Vegan Stir Fry with Baked Tofu

Stir fry is one of the easiest dishes to whip up at home, that also happens to be super healthy. It can easily be made vegetarian, or even vegan, like this one! This delicious stir fry is ready in a few steps and is sure to please a crowd. 

Ingredients

(Serves 4)

  • 1 large white onion
  • ½ white cabbage
  • 2 bell peppers (any color)
  • 3 cloves garlic
  • 1-inch piece of ginger
  • 1 red chili
  • 1 tablespoon soy sauce
  • Cilantro to serve

For the tofu:

  • 15 oz firm tofu
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 teaspoon sriracha
  • 1 tablespoon maple syrup
  • 1 tablespoon peanut butter

Instructions

  1. Preheat your oven to 350 ℉
  2. In a bowl, mix the sesame oil, vinegar, sriracha, maple syrup, and peanut butter
  3. Chop the tofu into even squares and add to an oven-proof dish
  4. Pour over the mixture and stir, and then place in the oven for 20-30 minutes
  5. Chop up the onion, cabbage, and peppers 
  6. Prepare and chop the garlic, ginger, and chili 
  7. Heat some oil in a large wok add the chopped veg and fry for 5 minutes, stirring continuously
  8. Add the garlic, ginger, and chili and continue to fry for another 5 minutes
  9. Add the soy sauce and stir until it has dissolved
  10. Serve this on top of your choice of rice or noodles
  11. Add the tofu on top of the stir fry and sprinkle over some cilantro
