Pie is one of the best meal choices out there when you’re craving something hearty and comforting. It can be super simple to make, and this recipe couldn’t be easier. Using ready-made pastry saves so much time and effort but produces delicious results. Chicken and mushroom are a perfect pairing in this creamy pie. This recipe serves 6.
Ingredients:
- 4 chicken breasts
- 3 cups button mushrooms
- 1 large white onion
- 4 cloves garlic
- 14 ounces of ready-rolled pastry
- 2 cups milk
- 1 tablespoon plain flour
- 1 tablespoon olive oil
- 1 tablespoon dried thyme
- 1/4 teaspoon ground nutmeg
- Salt and pepper, to taste
Instructions:
- Preheat the oven to 350 F.
- Finely slice the onion. Chop the mushrooms into small slices.
- Dice the chicken breasts.
- Heat oil in a large pot and add the chicken breasts. Once they’ve turned white on the outside, add the onion.
- Fry for 10 minutes and then add the mushrooms, thyme, salt, and pepper. After 5 minutes crush the garlic cloves into the pot and continue to fry on a low heat.
- Meanwhile, make the white sauce.
- Heat the tablespoon of oil in a non-stick pan and add the flour. Mix to form a paste.
- Gently pour the milk into the pan, add the nutmeg, and increase the heat.
- Simmer while stirring constantly for 10-15 minutes, until it starts to thicken.
- Pour the white sauce into the chicken pan and leave to gently simmer.
- Cut the pastry to fit your pie dish and then line the dish with the pastry.
- Transfer the pie mixture to the dish, and cover it with a pastry lid.
- Place in the oven for 30-40 minutes, until the pastry is nicely browned.
- Leave to stand for 5 minutes before serving.
