Tourlou (Greek Vegetable Stew)
Ingredients:
- 1 eggplant
- 1 zucchini
- 1 onion
- 1 leek
- 2 carrots
- 3 cloves of garlic
- 2 potatoes
- 2 tomatoes
- 1 cup of vegetable stock
- ½ cup of tomato paste
Instructions:
Fry the onions, leek, carrots and garlic until the onions are softening. Add the sliced eggplant and zucchini to the pan, and fry until they are crisping. Add the tomato paste, sliced tomatoes and potatoes, and then add the vegetable stock. Bring to a simmer, and let it cook on a medium heat for half an hour. Serve with green salad and crusty white bread.
Greek Salad
Ingredients:
- 1 block of feta cheese
- ½ cup of black olives
- 2 tomatoes
- Salad leaves (a big handful)
- 1 red onion
- Olive oil
Instructions:
Finely slice the tomatoes and onion. Cube the feta and cut the olives in half. Mix the ingredients, as well as the salad leaves, in a bowl, then dress with olive oil. Serve immediately.
