Many people claim that breakfast for dinner – eating cereal, pancakes, waffles, and other typical breakfast foods at dinner time – is a favorite meal choice. However, by thinking a little differently, we can up our nutrient intake and start the day off deliciously, by selecting foods at breakfast time that we might normally associate with dinner. Egg Fried Rice
Ideally, you will have some cooked rice left over from the night before, but if not you can cook some up in about ten minutes. This recipe serves two.
Ingredients:
- 1 cup cooked rice
- 3 eggs
- Soy sauce
- ½ cup frozen peas
- Oil
Instructions:
Cook the frozen peas by boiling them for around 5 minutes. Heat oil in a pan, and add the rice, peas, and a splash of soy sauce. When the rice is starting to crisp, whisk the eggs and add them to the pan. Remove from the heat, and let the eggs cook in the residual heat. Serve immediately.
Polenta Fries
Again, this recipe works best when you’ve eaten polenta the night before and have some left over. This recipe serves two.
Ingredients:
- 1 cup cooked polenta
- 1 tin tomatoes
- 2 eggs
- Oil
Instructions:
Heat oil in a pan and fry the polenta in strips, seasoning with a little salt and pepper if desired. Heat the tin of tomatoes in a pan, and then fry the eggs (in the polenta pan if you wish). Serve immediately.
