Vegan Carnitas Tacos

Carnitas can literally be translated as “little meats”, but this recipe is actually 100% plant-based. Soto replaced meat with oyster mushrooms this time around, but she also recommends using green jackfruit in brine as a substitute.

Vegan Rajas Con Crema Tacos

Rajas con crema is traditionally made with sliced poblano peppers, so it can easily be transformed into a vegan dish. Soto served it inside tacos with Mexican red rice.

Traditional Mexican sausages known as chorizo served as inspiration for this dish, but no meat was used in its making. Soto opted for soy-based meat instead to give her tacos an incredibly delicious flavor.

Soto often uses oyster mushrooms instead of meat to veganize popular Mexican specialties, and that’s what she did with chicharrón, a traditional dish usually made with fried pork belly or fried pork ribs.
