Put These May Food Holidays on Your Calendar

Believe it or not, the month of May is just around the corner and it’s time to start thinking about all of the food celebrations that take place during the fifth month of the year! If you are looking for some excitement this month, one great way to spice up your daily routine is by celebrating these holidays with a special meal. Be sure to put them on your calendar!

National Empanada Day: May 8th

Empanadas are a fried, doughy treat that is commonly made and consumed in countries such as Spain, Argentina, and the Philippines. They can be filled either with sweet or savory ingredients and are the perfect snack on the go!

World Baking Day: May 19th

Baking has its world celebration day on the nineteenth of May, a day in which we should all dedicate some time to baking one of our favorite treats! From cakes to breads, use your imagination and make something absolutely to die for on this day.

BLUEBERRY CRUMB CAKE 🍰 I could NOT stop eating this grain free + refined sugar free deliciousness last night. It’s like a crumb cake meets a gooey berry cobbler and my mind just melted. Ev and I ate half the pan in less than 20 minutes 😂 . I saw this recipe by @inagarten and knew I had to give it the @beachsidekitchen twist. So I swapped white flour for almond flour (more fiber + protein), swapped sour cream for Greek Yogurt (dat protein), used a little less butter and swapped in coconut sugar. It’s not quite as sweet or fluffy as hers looks, but DAMN it hits the freakin spot! . . BLUEBERRY CRUMB CAKE For the streusel: 1/2 cup coconut sugar 1 teaspoon cinnamon 1/8 teaspoon nutmeg 4 tbs unsalted butter, melted 3/4 cups almond flour 1 tbs coconut flour. . For the cake: 6 tbs butter, softened 3/4 cup coconut sugar 2 eggs 1 tsp vanilla extract 1/2 tsp grated lemon zest 2/3 cup Greek yogurt 1 1/4 cups almond flour 1 tsp baking powder 1/4 tsp baking soda Pinch of salt 1 cup fresh blueberries . Directions Heat oven to 350. Mix together streusel ingredients and set aside. For cake: In a bowl, cream together butter and sugar. Add eggs and stir until incorporated. Add vanilla extract, lemon zest, and Greek yogurt. Then add dry ingredients. Last, fold in the blueberries. Pour batter into a lined 8×8 baking tin or round 9 inch pan. Crumble the streusel topping evenly over cake batter. Bake for 40-55 minutes or until cooked through (I always err on the side of under baked personally). Let cool completely, then enjoy!

World Hamburger Day: May 28th

Hamburgers are a classic food that is best enjoyed made outside on a grill in the beautiful spring weather. On this Thursday, why not fire up your grill after work and make your favorite hamburger to celebrate?
