Try Out this Awesome Roasted Pepper and Mushroom Linguine

If you’re looking for something vibrant and bursting with flavor to liven you up this winter, you need to try out this tomato linguine recipe. It only takes 20 minutes to cook, but you’ll wish you could be eating it for hours. Here’s how to make it in a few simple steps.

Ingredients

  • 1 bell pepper
  • 1 can of closed cup mushrooms
  • 2 garlic cloves
  • 1 box of Linguine pasta
  • Chives
  • Tomato puree
  • Finely chopped tomatoes
  • Basil
  • Vegetable stock powder
  • sun-dried tomato paste

Roasted Pepper Instructions

Preheat your oven to 425 F. Chop your pepper into small chunks and sprinkle them with oil, salt, and pepper. Place them on the top shelf of the oven to roast for 15-20 minutes.

Pasta Instructions

Add salt to a large saucepan of boiling water and immerse the linguine. Boil for around 12 minutes, or until tender. Drain and mix with olive oil to prevent the pasta from sticking.

Prepare the Sauce

Fry thinly sliced mushrooms on medium-high heat for 3-4 minutes, and then season with salt and pepper. Add garlic and fry for a further 30 seconds. Stir in tomato puree, chopped tomatoes, vegetable stock, and sun-dried tomato paste. When the pepper is ready, mix it into the sauce.

Serve
