These Lime-Flavored Cookies are Refreshingly Delicious

Cookies are a treat at any time of day, and this lime-flavored variety is particularly refreshing in the summer months. You can adjust the quantity of lime zest and juice to your preference, and an addition of some dark chocolate chips would complement the citrus flavor very well. Serve alongside some Earl Grey tea or some coffee, or enjoy crumbled over yogurt as an exceptionally easy dessert.

Ingredients (to serve 12):

  • 2 cups of plain flour
  • 1 cup of unsalted butter
  • 1 1/2 cups of caster sugar
  • 1 1/2 limes, juiced and zested
  • 1 egg
  • 2 tablespoons of milk

Instructions:

  1. Begin by creaming together the butter and sugar until it is light and smooth.
  2. Whisk in the flour and then gradually beat in the egg, until the mix is pale and fluffy.
  3. Add in the lime juice and lime zest, and slowly stir in the milk. Mix well to ensure everything is well combined.
  4. Roll out the mix onto a flat, floured surface. Cut out the cookies using a cutter, and then place them on a lined baking tray.
  5. Bake in an oven heated to 370°F for 15 – 20 minutes.
  6. Allow to cool before serving.
