Although cooking is both rewarding and necessary, it can often lead to a lot of waste. Most recipes only need a specific part of an ingredient, and when faced with the challenge of throwing something away or using it, pick the latter with the help of these recipes.

Chickpea Can Liquid

If you love meringues cookies but don’t have egg whites or are vegan, chickpea liquid or aquafaba is your answer. Treat the liquid just as you would egg whites, so all you need to do is whip the liquid with sugar, and bake. Although these meringues will take a bit longer to bake, it is well worth it, and the flavor is just the same. 

Pasta Water

After you make pasta, it’s natural to think of straining the pasta and letting the water go down the kitchen strain. Don’t fall into this trap. This water has become salty and starchy from the pasta and is a great thickener for sauces, as well as enhancing flavor. 

Wilting Vegetables

If your vegetables are standing on their last leg, don’t throw them away! Lackluster vegetables are perfect for making stock. Just boil them with water, add any herbs you have on hand and you have homemade stock in no time.
