This Chicken and Mushroom Pasta is a Comforting Delight

Chicken and mushroom is a winning combination every time, and this creamy pasta is the perfect example. Super comforting, this meal is perfect for a mid-week dinner when you’re after something satisfying yet easy to make. You can always add extra veg to this for even more goodness, such as frozen peas or spinach.

Ingredients

(Serves 2)

  • 2 chicken breasts 
  • 1 cup of button mushrooms 
  • 1 white onion
  • 2 cloves of garlic
  • 1 tablespoon dried thyme
  • 1 teaspoon smoked paprika 
  • Salt and pepper to taste
  • 5 oz of butter 
  • ½ cup chicken stock
  • ½ cup milk 
  • 1 tablespoon plain flour
  • 1 cup pasta

Instructions

  1. Chop the onion, garlic, mushrooms, and chicken
  2. Heat some oil in a pan and add the chicken and onion
  3. Fry for about 5 minutes turning regularly
  4. Once no pink chicken is showing anymore, add the mushrooms to the pan
  5. Fry for another 5 minutes, and then add the garlic and half the butter
  6. Continue to fry for another 5 minutes and then take off the heat
  7. In another pan, heat the rest of the butter and then stir in the flour and mix thoroughly
  8. Add the milk and the chicken stock and increase the heat
  9. Leave to simmer for 10-15 minutes stirring occasionally
  10. Meanwhile, cook the pasta according to package instructions 
  11. When the pasta is cooked and drained, add the chicken and mushroom pan to it and then pour the sauce in
  12. Put over a low heat and stir for about 5 minutes and then serve immediately
