This Vegan Pancake Recipe Will Work Every Time

Pancakes are one of the best ways to start your day, but getting them right without using eggs or milk can be tricky. Here’s a vegan pancake recipe that will work every time.

Ingredients

  • 1 cup of plain flour
  • 1 tablespoon of baking powder
  • Pinch of salt
  • 1 tablespoon of sugar (only if making sweet pancakes)
  • 1 teaspoon of vanilla extract (only if making sweet pancakes)
  • 1 cup of non-dairy milk (soya milk works well
  • 2 tablespoons of vegetable oil

Instructions

  1. Mix your flour, sugar, baking powder, and salt in a large mixing bowl.
  2. In a different bowl, combine your non-dairy milk with your vegetable oil, and vanilla extract (if you are using it).
  3. Combine these mixtures and stir until you have a consistent texture. Use an electric whisk if you want to be sure of getting rid of any lumps. Once it has been thoroughly mixed, leave your batter in the fridge for 30 minutes.
  4. When ready to start making your pancakes, heat up a shallow frying pan with a drizzle of cooking oil. It needs to get really hot before you add your batter in. When it is hot, ladle a quarter cup of batter into your pan. Leave to cook on one side for 2-3 minutes before flipping. Now you can start putting your toppings on, and you are ready to serve!
