3 Meals Ready in Under 10 Minutes

Being hungry and short on time is a combination that can lead to toast for dinner or a simple bowl of cereal. Get creative and try one of these recipes which will be on the table in less than 10 minutes!

Vegetable Fried Rice

Ingredients (to serve 2):

  • 1/2 cup of rice
  • 2 tablespoons of oil
  • 1 tablespoon soy sauce
  • 1 tablespoon chilli sauce
  • Green veg, such as spinach, cabbage, or broccoli
  • 2 cloves of garlic
  • 1 tablespoon of ginger paste

Instructions

Cook the rice according to the packet instructions. While the rice is boiling, heat the oil in a pan and fry the sliced cloves of garlic. After 5 minutes, add the ginger paste and chilli sauce. Finely slice the vegetables and add them to the pan. Once the rice is cooked, add this to the other ingredients and heat through. Remove from the heat, stir the soy sauce through the dish, and serve.

Tomato and Chickpea Stew

Ingredients (to serve 2):

  • 1 tin of tomatoes
  • 1 tin of chickpeas
  • 1 onion
  • 3 tablespoons of milk
  • 3 tablespoons of butter
  • Salt and pepper

Instructions:

Heat the butter in a pan. As it melts, halve the onion and place each half in the butter. Allow the onion to start browning. Add the milk, and simmer for 5 minutes. After 5 minutes, add the tomatoes and chickpeas to the pan. Remove the onion and season with salt and pepper. Serve with bread and a green salad.

Spinach and Mushroom Omelette

Ingredients (to serve 2):

  • 4 eggs
  • 2 tablespoons of butter
  • 1/2 cup of mushrooms
  • 1 cup of raw spinach
  • Salt and pepper

Instructions:

Heat 1 tablespoon of butter in a pan. Slice the mushrooms and add them to the pan. After about 5 minutes, drain the juices released by the mushrooms into a jar or container. Add the rest of the butter to the pan, whisk the eggs in a bowl and add them to the pan. Season well with salt and pepper. As the egg starts to set, add the chopped spinach to the omelette and drizzle the mushroom juices over the top. Cook for another few minutes, and then remove from the heat and serve.
