Are you growing tired of eating the same food for breakfast each day? Well, there’s a new meal that mixes together the best that eggs and tacos have to offer. Here’s your guide to making egg-smash tacos.
Ingredients:
- 1/4 cup olive oil
- 1/4 cup white wine vinegar
- 1/2 cup fresh cilantro
- 1/2 cup scallions
- 1 tablespoon crumbed Greek feta cheese
- 1 1/3 cups shredded white cheddar
- 8 flour tortillas
- 8 large eggs
- 16 ounces Mexican chorizo
Instructions:
- Put a fistful of chorizo in the centre of each tortilla.
- Roll them up and place them in a nonstick skillet, frying them over medium-high heat. Cook for 1 to 2 minutes until meat turns golden brown. Flip onto the other side and repeat.
- Reduce the heat to medium and add the cheddar cheese to the skillet. Once it starts to melt, crack and egg and pour it into the centre of the cheese as it molds together. Once the cheese is browning and the egg sets, remove from the skillet and place over the sausage tortilla. Repeat with remaining tortillas.
- In a small bowl, pour cilantro, feta cheese oil, scallions, vinegar, and lime zest. Mix well and drizzle over the tacos.
