Slow Cooker Mediterranean Chicken Is Just What You Need For Dinner

Everyone knows a slow cooker is the the ultimate tool for people on the run who still want to enjoy a healthy fulfilling meal. Whether you have a full time job or just don’t know love all the steps that go into cooking a large meal, this slow cooker recipe is for you. It serves a lot of people, is really healthy, and is loaded with flavor.


Instructions

  1. Start by seasoning 4-6 boneless skinless chicken thighs with salt and pepper and place in sauté pan over medium heat just for a minute or two to brown them. Transfer to the slow cooker.
  2. To the slow cooker, add 2 tablespoons of capers, 1 cup of sliced red peppers, 1 cup of kalamata olives or whatever olives you have on hand, 1 cup of chopped onions or shallots, and 5 cloves of diced garlic.
  3. In a small bowl, whisk together, 1 tablespoon of dried basil and oregano, and 1/2 teaspoon of dried thyme, rosemary, sage, and chili flakes with the juice of 2 lemons.
  4. Pour the mixture all over the chicken and vegetables and put the cover on.
  5. Cook on high for 2 hours or low for 4 hours.
  6. Serve with any fresh herbs you have like basil, rosemary, or parsley, and enjoy!
