Its velvety texture and Goldilocks-just-right level of sweetness make it the perfect blank canvas for almost any flavor imaginable, and its creamy consistency makes it as easy to work with as it is to prepare. Read on for our go-to recipe.

Ingredients:

  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1/4 teaspoon salt
  • 1-2 teaspoons pure vanilla extract (or other flavor extracts of your choice)
  • 2-4 tablespoons milk (adjust as needed for consistency)
  • Food coloring

Instructions:

  1. In a large mixing bowl, use an electric mixer to beat the softened butter until creamy.
  2. Add the confectioners’ sugar one cup at a time, beating well after each addition. 
  3. Mix in the salt and your preferred flavoring. You can experiment with other extracts like almond, lemon, or even add a tablespoon of cocoa powder to make a chocolate buttercream.
  4. If the frosting is too thick, add 1-2 tablespoons of heavy cream or milk and continue beating until you reach your desired consistency. If it’s too thin, add more powdered sugar.
  5. Taste and adjust the flavor or sweetness by adding more flavor extract or confectioners’ sugar if needed.
  6. Beat the frosting on medium-high for 2-3 minutes until it becomes light, fluffy, and well combined.
  7. If you’d like to make colored frosting, add your food coloring one drop at a time and stir with a spatula until the color is fully incorporated. Keep going until you reach your desired shade, keeping in mind that most food dyes tend to darken slightly over time. 
  8. Use the buttercream immediately to frost cakes, cupcakes, or cookies. Alternatively, you can store it in an airtight container in the refrigerator for a short period, but allow it to come to room temperature and re-whip before using.

As we get ready for the warm summer weather, what better to celebrate is there than by biting down on some scrumptious desserts? That’s where sweet lemon bars come in. Here’s how you can bake some delicious lemon bars that will be sure to get you and your friends in a party mood.

Ingredients

  • 2 3/4 cups granulated sugar
  • 1 cup softened butter
  • 2 1/2 cups flour
  • 1/4 cup powdered sugar
  • cooking spray
  • 6 large eggs
  • 3/4 cup lemon juice
  • Lemon zest

Instructions

  1. Preheat your oven to 350°F and grease a baking sheet with cooking spray.
  2. In a large bowl, add butter and 3/4 cups sugar and whisk until fluffy for about 2 to 3 minutes, before adding 2 1/4 cups flour and powdered sugar and whisk until combined.
  3. Spread the dough across the baking pan and flatten. Bake until lightly browned for about 20 to 25 minutes. Once ready, allow to cool for 30 minutes.
  4. While the crust cools, whisk together the remaining sugar, flour, eggs, lemon juice and lemon zest in a large mixing bowl. Pour the filling over the crust and bake for 25 minutes.

Who says being vegan means only eating salad? There are so many exciting vegan foods out there these days that there aren’t many foods that vegans have to go without anymore. These indulgent chocolate brownies are the perfect example of this, and they are straightforward to make so anyone can enjoy them regardless of baking proficiency. 

Ingredients:

(Makes 12 brownies)

  • 1.5 cups plain flour
  • 1 teaspoon baking powder
  • 1 cup caster sugar
  • ½ cup cocoa powder 
  • 4 tablespoons coconut oil
  • 1 cup chocolate chips

Instructions:

  1. Preheat oven to 340℉.
  2. In a large bowl, add the flour, baking powder, sugar, and cocoa powder.
  3. Heat the coconut oil slightly until it becomes liquid. You can either microwave it or heat it gently on the hob.
  4. Leave to cool for a few minutes, and then add to the dry mixture and mix well throughout.
  5. Add the chocolate chips and stir into the mixture.
  6. Take a square oven tray and line it with greaseproof paper.
  7. Transfer the brownie mixture to the tray and smooth it out into an even layer.
  8. Place in the oven for 25-30 minutes.
  9. Check it’s cooked throughout by putting a clean knife in the middle: you want the center to be fudgy but not liquid.
  10. Leave to cool for about 10 minutes before tucking in and enjoying.

Are you thinking of how to throw an epic St. Patrick’s Day with plenty of Irish charm? Well, this dessert is sure to get your party guests excited. Here’s how to make a cheerful Leprechaun Bark just in time for your St. Patrick’s Day bash.

Ingredients:

  • 1 cup Lucky Charms
  • 2 bags of white chocolate chips (12 ounces)
  • 4 teaspoons vegetable oil
  • 1/2 cup green M&M’s
  • 3 tablespoons green and gold sprinkles
  • Cooking spray
  • Green food coloring

Instructions:

  1. Cover a baking tray with cooking spray. Boil a bowl of water and, once simmering on a low level, place a large heatproof bowl over it.
  2. In the heatproof bowl, cook 1 1/2 bags of chocolate chips and 1 teaspoon of oil. Continue stirring until melted.
  3. Pour the melted chocolate onto the baking sheet. Using a spatula or spoon, spread the melted chocolate evenly across the surface of the tray.
  4. Replace the heatproof bowl with the bowl of simmering water. Cook the remaining chocolate chips and 3 teaspoons of oil, stirring the same way as last time. Once melted, stir in the green food coloring.
  5. Put the green chocolate over the white chocolate and sprinkle in the Lucky Charms and M&M’s.
  6. Allow to sit for 30 minutes and tuck in.

In our humble opinion, there are few things in life that can’t be improved with the addition of sprinkles. For major celebrations and casual baking alike, the color and crunch that sprinkles provide can make any sweet treat feel more festive. That said, store-bought sprinkles are often made with weird preservatives and artificial ingredients that take much of the fun out of funfetti, so we prefer to make our own. Here’s how:

Ingredients:

  • 2 cups powdered sugar
  • 1 egg white
  • 1 teaspoon vanilla extract
  • Natural food coloring, store-bought or:
  • Beetroot powder for pink, turmeric for yellow, matcha for green, butterfly pea powder for blue
  • Pinch of salt

Instructions:

  1. In a bowl, whisk together powdered sugar, egg white, vanilla extract, and a pinch of salt until it forms a thick, smooth icing.
  2. Divide the icing into separate bowls for each color you’d like. If using liquid store-bought food coloring, add 1 drop at a time and mix until you achieve the desired color intensity. For powders, powders, add ⅛ tsp at a time.
  3. Prepare piping bags with small round tips. If you don’t have tips, you can snip a small hole in the corner of each bag.
  4. Fill each piping bag with a different colored icing.
  5. Line a tray with parchment paper. Hold the piping bag above the tray and squeeze small lines or dots onto the paper. Repeat with other colors.
  6. Allow the sprinkles to dry at room temperature for several hours or until firm to the touch.
  7. Once dry, gently break up the lines into bite-sized pieces.
  8. Store in an airtight container until ready to use.
  9. Enjoy on cupcakes, cookies, or any dessert that needs a colorful touch!

Tiffin is one of the tastiest, most indulgent chocolatey treats but is so easy to make. It’s also really simple to make it entirely vegan, so if you want a dairy-free chocolate sweet treat then this recipe is perfect. Always double-check that dark chocolate and plain cookies or crackers are vegan. These tiffin bars will keep in the fridge for up to one week after making them.

Ingredients:

(Serves 12)

  • 10 ounces dark chocolate
  • 8 ounces plain cookies or crackers
  • 1 cup raisins
  • ¼ cup coconut oil 
  • ¼ cup maple syrup

Instructions:

  1. Smash the crackers up into small pieces and place them into a large bowl.
  2. Break the chocolate into pieces and place in a heatproof bowl.
  3. Place the bowl over a pan of bubbling water on the stove.
  4. Add the coconut oil and maple syrup to the chocolate and gently stir over the hot water until they are completely melted.
  5. Pour this mixture into the bowl with the crackers in and then add the raisins.
  6. Give it all a good stir until thoroughly mixed.
  7. Line a baking tray with greaseproof paper.
  8. Transfer the mixture to the baking tray and spread out into an even layer.
  9. Leave to cool completely, and then place in the fridge for 2-3 hours.
  10. Remove from the fridge and slice into 12 bars.

Baileys is a cream-based whiskey liquor that has been produced in Ireland since the 1970s. Its sweet, chocolatey flavor makes it a great addition to coffee or other alcoholic cocktails, but for St. Patty’s Day, we love it in this pudding pie by Baker by Nature. Ingredients:

Crust

  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon sugar
  • 3-4 tablespoons ice water
  • 1/2 cup (1 stick) unsalted butter, chilled and diced

Filling

  • 1 1/2 cups heavy cream
  • 1 cup packed brown sugar
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter
  • 1 tablespoon all-purpose flour
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions:

  1. In a bowl, whisk flour, salt, and sugar. Cut chilled butter into the mix until crumbly. Gradually add ice water, stirring until dough forms. 
  2. Wrap the dough in plastic wrap and chill for an hour. 
  3. Preheat the oven to 350°F. 
  4. For the filling, melt butter with heavy cream and sugars over medium heat, stirring until smooth. 
  5. Thicken with flour, vanilla, and salt, cooking for 5 minutes. 
  6. Roll the dough and place it in a 9-inch pie plate
  7. Fill with the sugar mixture and bake for 45-50 minutes until set. 
  8. Cool on a rack before serving.

This peach cobbler is super easy to make but produces incredible results. It’s the perfect warming dessert to enjoy on a cozy fall evening and works so well with vanilla ice cream or custard. You can use tinned peaches if you can’t get hold of fresh ones, but it will be nicer with fresh peaches if possible.

Ingredients:

  • 6-8 peaches
  • ¼ cup salted butter
  • ¾ cup demerara sugar
  • 1 cup plain flour
  • 1 teaspoon baking powder
  • 1 tablespoon dried cinnamon
  • 1 teaspoon dried nutmeg
  • 2 eggs

Instructions:

  1. Preheat the oven to 360℉.
  2. Peel the peaches, slice them into quarters, remove the stones, and place them in a bowl.
  3. Melt 1 tablespoon of butter and pour it over the peaches.
  4. Sprinkle in the cinnamon and 2 tablespoons of the sugar and mix throughout.
  5. Transfer the peaches to an ovenproof dish.
  6. In a separate bowl, mix together the flour, remaining sugar, remaining butter, nutmeg, baking powder, and eggs until combined and smooth.
  7. Pour this mixture over the peaches and spread out into an even layer.
  8. Cover with tin foil and place in the oven for 15 minutes.
  9. Take it out of the oven and remove the tin foil.
  10. Return to the oven for another 10 minutes.
  11. Leave to stand for 5-20 minutes before serving with ice cream or custard.

  • 1 cup desiccated coconut
  • 1 cup dried cranberries

Instructions:

  2. Sift the flour and bicarbonate of soda into a large mixing bowl.
  3. Add the sugar and the butter and mix until completely combined.
  4. Crack the eggs into the bowl and beat into the mixture.
  5. Add the desiccated coconut and dried cranberries and mix until evenly spread. 
  6. Line a large baking tray with greaseproof paper.
  7. Using your hands divide the mixture into evenly sized balls until you have 12.
  8. Place them on the baking tray ensuring they have enough space to spread.
  9. Place in the oven for 15-18 minutes, ensuring they’re cooked all the way through.
  10. Transfer to a cooling rack and leave to cool for 10 minutes before enjoying.

  2. In a large bowl, add butter and 3/4 cups sugar and whisk until fluffy for about 2 to 3 minutes, before adding 2 1/4 cups flour and powdered sugar and whisk until combined.
  3. Spread the dough across the baking pan and flatten. Bake until lightly browned for about 20 to 25 minutes. Once ready, allow to cool for 30 minutes.
  4. While the crust cools, whisk together the remaining sugar, flour, eggs, lemon juice and lemon zest in a large mixing bowl. Pour the filling over the crust and bake for 25 minutes.
  5. Refrigerate for 3 to 4 hours before serving.

Who says being vegan means only eating salad? There are so many exciting vegan foods out there these days that there aren’t many foods that vegans have to go without anymore. These indulgent chocolate brownies are the perfect example of this, and they are straightforward to make so anyone can enjoy them regardless of baking proficiency. 

Ingredients:

(Makes 12 brownies)

  • 1.5 cups plain flour
  • 1 teaspoon baking powder
  • 1 cup caster sugar
  • ½ cup cocoa powder 
  • 4 tablespoons coconut oil
  • 1 cup chocolate chips

Instructions:

  1. Preheat oven to 340℉.
  2. In a large bowl, add the flour, baking powder, sugar, and cocoa powder.
  3. Heat the coconut oil slightly until it becomes liquid. You can either microwave it or heat it gently on the hob.
  4. Leave to cool for a few minutes, and then add to the dry mixture and mix well throughout.
  5. Add the chocolate chips and stir into the mixture.
  6. Take a square oven tray and line it with greaseproof paper.
  7. Transfer the brownie mixture to the tray and smooth it out into an even layer.
  8. Place in the oven for 25-30 minutes.
  9. Check it’s cooked throughout by putting a clean knife in the middle: you want the center to be fudgy but not liquid.
  10. Leave to cool for about 10 minutes before tucking in and enjoying.

Are you thinking of how to throw an epic St. Patrick’s Day with plenty of Irish charm? Well, this dessert is sure to get your party guests excited. Here’s how to make a cheerful Leprechaun Bark just in time for your St. Patrick’s Day bash.

Ingredients:

  • 1 cup Lucky Charms
  • 2 bags of white chocolate chips (12 ounces)
  • 4 teaspoons vegetable oil
  • 1/2 cup green M&M’s
  • 3 tablespoons green and gold sprinkles
  • Cooking spray
  • Green food coloring

Instructions:

  1. Cover a baking tray with cooking spray. Boil a bowl of water and, once simmering on a low level, place a large heatproof bowl over it.
  2. In the heatproof bowl, cook 1 1/2 bags of chocolate chips and 1 teaspoon of oil. Continue stirring until melted.
  3. Pour the melted chocolate onto the baking sheet. Using a spatula or spoon, spread the melted chocolate evenly across the surface of the tray.
  4. Replace the heatproof bowl with the bowl of simmering water. Cook the remaining chocolate chips and 3 teaspoons of oil, stirring the same way as last time. Once melted, stir in the green food coloring.
  5. Put the green chocolate over the white chocolate and sprinkle in the Lucky Charms and M&M’s.
  6. Allow to sit for 30 minutes and tuck in.

In our humble opinion, there are few things in life that can’t be improved with the addition of sprinkles. For major celebrations and casual baking alike, the color and crunch that sprinkles provide can make any sweet treat feel more festive. That said, store-bought sprinkles are often made with weird preservatives and artificial ingredients that take much of the fun out of funfetti, so we prefer to make our own. Here’s how:

Ingredients:

  • 2 cups powdered sugar
  • 1 egg white
  • 1 teaspoon vanilla extract
  • Natural food coloring, store-bought or:
  • Beetroot powder for pink, turmeric for yellow, matcha for green, butterfly pea powder for blue
  • Pinch of salt

Instructions:

  1. In a bowl, whisk together powdered sugar, egg white, vanilla extract, and a pinch of salt until it forms a thick, smooth icing.
  2. Divide the icing into separate bowls for each color you’d like. If using liquid store-bought food coloring, add 1 drop at a time and mix until you achieve the desired color intensity. For powders, powders, add ⅛ tsp at a time.
  3. Prepare piping bags with small round tips. If you don’t have tips, you can snip a small hole in the corner of each bag.
  4. Fill each piping bag with a different colored icing.
  5. Line a tray with parchment paper. Hold the piping bag above the tray and squeeze small lines or dots onto the paper. Repeat with other colors.
  6. Allow the sprinkles to dry at room temperature for several hours or until firm to the touch.
  7. Once dry, gently break up the lines into bite-sized pieces.
  8. Store in an airtight container until ready to use.
  9. Enjoy on cupcakes, cookies, or any dessert that needs a colorful touch!

Tiffin is one of the tastiest, most indulgent chocolatey treats but is so easy to make. It’s also really simple to make it entirely vegan, so if you want a dairy-free chocolate sweet treat then this recipe is perfect. Always double-check that dark chocolate and plain cookies or crackers are vegan. These tiffin bars will keep in the fridge for up to one week after making them.

Ingredients:

(Serves 12)

  • 10 ounces dark chocolate
  • 8 ounces plain cookies or crackers
  • 1 cup raisins
  • ¼ cup coconut oil 
  • ¼ cup maple syrup

Instructions:

  1. Smash the crackers up into small pieces and place them into a large bowl.
  2. Break the chocolate into pieces and place in a heatproof bowl.
  3. Place the bowl over a pan of bubbling water on the stove.
  4. Add the coconut oil and maple syrup to the chocolate and gently stir over the hot water until they are completely melted.
  5. Pour this mixture into the bowl with the crackers in and then add the raisins.
  6. Give it all a good stir until thoroughly mixed.
  7. Line a baking tray with greaseproof paper.
  8. Transfer the mixture to the baking tray and spread out into an even layer.
  9. Leave to cool completely, and then place in the fridge for 2-3 hours.
  10. Remove from the fridge and slice into 12 bars.

Lucky Charms Frosted Sugar Cookies

Give your sugar cookies a seasonal spin with this recipe by Jenna from Butternut Bakery. Starting with soft and fluffy bakery-style cookies, she adds a rich layer of homemade vanilla buttercream before topping it all off with a handful of Lucky Charms cereal. Nostalgic, festive, and magically delicious.

Baileys Irish Cream Chocolate Pudding

Baileys is a cream-based whiskey liquor that has been produced in Ireland since the 1970s. Its sweet, chocolatey flavor makes it a great addition to coffee or other alcoholic cocktails, but for St. Patty’s Day, we love it in this pudding pie by Baker by Nature. Enjoy it on its own, or as dessert after a traditional Irish meal of corned beef and cabbage.

Ever had one of those days where only a spoonful of sweetness can make everything better? Sugar pie is the dessert equivalent of a warm hug from your favorite person. It’s the kind of treat that doesn’t need an occasion to make its way onto your table. Let’s dive in.

Ingredients:

Crust

  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon sugar
  • 3-4 tablespoons ice water
  • 1/2 cup (1 stick) unsalted butter, chilled and diced

Filling

  • 1 1/2 cups heavy cream
  • 1 cup packed brown sugar
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter
  • 1 tablespoon all-purpose flour
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions:

  1. In a bowl, whisk flour, salt, and sugar. Cut chilled butter into the mix until crumbly. Gradually add ice water, stirring until dough forms. 
  2. Wrap the dough in plastic wrap and chill for an hour. 
  3. Preheat the oven to 350°F. 
  4. For the filling, melt butter with heavy cream and sugars over medium heat, stirring until smooth. 
  5. Thicken with flour, vanilla, and salt, cooking for 5 minutes. 
  6. Roll the dough and place it in a 9-inch pie plate
  7. Fill with the sugar mixture and bake for 45-50 minutes until set. 
  8. Cool on a rack before serving.

This peach cobbler is super easy to make but produces incredible results. It’s the perfect warming dessert to enjoy on a cozy fall evening and works so well with vanilla ice cream or custard. You can use tinned peaches if you can’t get hold of fresh ones, but it will be nicer with fresh peaches if possible.

Ingredients:

  • 6-8 peaches
  • ¼ cup salted butter
  • ¾ cup demerara sugar
  • 1 cup plain flour
  • 1 teaspoon baking powder
  • 1 tablespoon dried cinnamon
  • 1 teaspoon dried nutmeg
  • 2 eggs

Instructions:

  1. Preheat the oven to 360℉.
  2. Peel the peaches, slice them into quarters, remove the stones, and place them in a bowl.
  3. Melt 1 tablespoon of butter and pour it over the peaches.
  4. Sprinkle in the cinnamon and 2 tablespoons of the sugar and mix throughout.
  5. Transfer the peaches to an ovenproof dish.
  6. In a separate bowl, mix together the flour, remaining sugar, remaining butter, nutmeg, baking powder, and eggs until combined and smooth.
  7. Pour this mixture over the peaches and spread out into an even layer.
  8. Cover with tin foil and place in the oven for 15 minutes.
  9. Take it out of the oven and remove the tin foil.
  10. Return to the oven for another 10 minutes.
  11. Leave to stand for 5-20 minutes before serving with ice cream or custard.

  • 1 cup desiccated coconut
  • 1 cup dried cranberries

Instructions:

  1. Preheat oven to 360℉.
  2. Sift the flour and bicarbonate of soda into a large mixing bowl.
  3. Add the sugar and the butter and mix until completely combined.
  4. Crack the eggs into the bowl and beat into the mixture.
  5. Add the desiccated coconut and dried cranberries and mix until evenly spread. 
  6. Line a large baking tray with greaseproof paper.
  7. Using your hands divide the mixture into evenly sized balls until you have 12.
  8. Place them on the baking tray ensuring they have enough space to spread.
  9. Place in the oven for 15-18 minutes, ensuring they’re cooked all the way through.
  10. Transfer to a cooling rack and leave to cool for 10 minutes before enjoying.
