Comforting and Delicious Peach Cobbler

This peach cobbler is super easy to make but produces incredible results. It’s the perfect warming dessert to enjoy on a cozy fall evening and works so well with vanilla ice cream or custard. You can use tinned peaches if you can’t get hold of fresh ones, but it will be nicer with fresh peaches if possible.

Ingredients:

  • 6-8 peaches
  • ¼ cup salted butter
  • ¾ cup demerara sugar
  • 1 cup plain flour
  • 1 teaspoon baking powder
  • 1 tablespoon dried cinnamon
  • 1 teaspoon dried nutmeg
  • 2 eggs

Instructions:

  1. Preheat the oven to 360℉.
  2. Peel the peaches, slice them into quarters, remove the stones, and place them in a bowl.
  3. Melt 1 tablespoon of butter and pour it over the peaches.
  4. Sprinkle in the cinnamon and 2 tablespoons of the sugar and mix throughout.
  5. Transfer the peaches to an ovenproof dish.
  6. In a separate bowl, mix together the flour, remaining sugar, remaining butter, nutmeg, baking powder, and eggs until combined and smooth.
  7. Pour this mixture over the peaches and spread out into an even layer.
  8. Cover with tin foil and place in the oven for 15 minutes.
  9. Take it out of the oven and remove the tin foil.
  10. Return to the oven for another 10 minutes.
  11. Leave to stand for 5-20 minutes before serving with ice cream or custard.
