If you’re looking for a simple, healthy, and satisfying side dish to go with your main course, then this recipe just might be for you. This recipe puts a wholesome twist on roasted eggplant, and is a great addition to a festive meal. Keep reading for this delicious and tasty recipe.

Ingredients:

  • One whole eggplant
  • 1 C cold water
  • 1 C sesame paste
  • Juice of half a lemon
  • 1/2 tsp sumac
  • 1/2 tsp of sweet paprika
  • 1/2 tsp of zaatar
  • Salt and pepper to taste
  • Handful of pomegranate seeds for garnish (optional)
  • Bunch of finely chopped parsley for garnish (optiional)
  • Pine nuts for garnish (optional)

Instructions

  1. Cut your eggplant in half and then cut into fourths without slicing too thin
  2. Line a greased parchment paper on a cookie sheet
  3. Roast in the oven on 425 degrees until fork tender
  4. Scoop out the insides and pat dry
  5. Prepare your tahini by mixing equal parts sesame paste and cold water, mix until smooth and creamy, but not too thick
  6. Add lemon juice to the mix and drizzle over the eggplant
  7. Add spices on top of the eggplants, salt and pepper to taste, and add desired garnish when you’re ready to serve
  8. Serve with kebabs or enjoy on its own!

If you love seafood but you’re a little short on time, it can be difficult to find a quick and easy meal that will satisfy your cravings. Fear not, however, as there is a solution. Here is a quick and tasty shrimp quesadilla that you can easily whip up when you’re short on time.

Ingredients:

  • 1/2 yellow onion
  • 1/2 bell pepper
  • 1/2 teaspoon paprika
  • 1/2 teaspoon ground cumin
  • 1 1/2 cups Monterey Jack cheese
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1/4 pound large shrimp
  • salt
  • 2 10-inch flour tortillas
  • 2 tablespoons butter
  • 2 tablespoons olive oil

Instructions:

  1. Place a large skillet over medium heat. Pour the olive oil and heat until simmering. Add the bell pepper and onion and sauté, stirring occasionally for 6 minutes.
  2. Add the shrimp, garlic powder, onion powder, cumin, and paprika to the skillet and season with salt according to taste. Cook for about 4 minutes, until the shrimp turns pink.
  3. Place the mixture in a bowl and set aside. Wipe down the skillet and add 1 tablespoon of butter. Allow it to melt down before adding the tortilla to the skillet.
  4. Sprinkle half of the cheese on the tortilla, add the shrimp mixture, and then add the remainder of the cheese.
  5. Top it off with the second tortilla and spread the remaining butter on top. Cook until the bottom is golden and crisp.
  6. Flip the quesadilla and cook the uncooked tortilla until golden and crisp.
  7. Place on a cutting board and slice into wedges before serving.

Waffle makers are one of those kitchen gadgets that sound great to have in theory, but ultimately end up being used once before getting stuck in the back of the pantry to collect dust. Most of us just don’t want to eat waffles often enough that it feels worth investing in a device with only one use. If you’re on a fence about buying a waffle maker or have one you rarely break out, you may be pleasantly surprised to learn that they’re actually good for much more than regular waffles. Here are some alternative ways we like to use ours. 

Falafel

Falafel is a type of Middle Eastern fritter made of ground chickpeas, herbs, and spices. Like most fritters, it’s usually prepared in a ball or disc shape, but the way we see it, there’s no reason not to prepare your very own fa-waffle. Prepare your falafel mix of choice, then heat it in ¼ cup batches in a waffle maker for about 5 minutes or until golden brown.

Cinnamon Rolls

Topped with whipped cream and maple syrup, waffles can certainly make for a tasty dessert in their own right, but when we’re looking for something a bit more indulgent, we love using our waffle makers to prepare cinnamon rolls. Any brand of canned cinnamon rolls will do—just give your iron a spritz with some non-stick spray, then place one uncooked roll in each corner. Heat on medium for about 3 minutes, then serve with plenty of cream cheese icing.

Omelets

From scrambled to hard-boiled to sunny side up, there are few foods that can be prepared in as many forms as eggs, and we’re here today to suggest one more. Crack and beat two eggs in a bowl and whisk with your preferred seasonings, then pour the mixture into a greased waffle iron and heat for about 2 minutes. Carefully remove and serve as part of any breakfast spread.

By the time Wednesday comes around, many of us lack the energy or inclination to spend hours in the kitchen in the evening, producing a restaurant-worthy meal. Instead, reach for a recipe like this one, which promises to have a tasty and nutritious meal on the table in around half an hour.

Ingredients (to serve 4):

  • 4 chicken thighs, breasts legs
  • 2 leeks
  • 8 potatoes
  • 6 cloves of garlic
  • 3 tablespoons of olive oil
  • A handful of fresh tarragon
  • A handful of fresh basil
  • 2 tablespoons of cashew nuts, soaked
  • 2 tablespoons of water
  • 1 teaspoon of salt

Instructions:

  1. Peel and slice the potatoes into roughly 2 inch cubes. Parboil them for 6 minutes, then drain and leave to cool.
  2. Heat the oven to 400 degrees F. Brush the chicken pieces with some of the olive oil and slice the leeks into rounds about half an inch thick. Place these in a baking tray.
  3. In a food processor, whizz up 2 tablespoons of the olive oil with the herbs, cashew nuts, water and salt.
  4. Add the parboiled potatoes to the baking tray, drizzle over the remaining olive oil and then drizzle over the herb dressing.
  5. Pop in the oven and bake for 40 minutes, checking a few times that nothing is burning.

Seriously easy and extremely tasty, this tray bake is a great crowd-pleaser and an ideal mid-week dinner.

  • 1 package of microwave rice (or fresh if you prefer)
  • 1 package of thinly sliced chicken breast cut into cubes

  • 1 tablespoon of hot honey

Instructions:

  1. Heat a non stick frying pan with oil of choice.
  2. Fully coat the chicken in the hot honey, then coat with the cornstarch and flour.
  3. Once the oil is heated place your chicken in and fry on both sides for three minutes.
  4. Stir in siracha as you fry then add broccoli to cook with the chicken.
  5. Once chicken is cooked and broccoli is softened, transfer to a plate.
  6. Serve the chicken and broccoli over steamed white rice and enjoy!

If you love seafood but you’re a little short on time, it can be difficult to find a quick and easy meal that will satisfy your cravings. Fear not, however, as there is a solution. Here is a quick and tasty shrimp quesadilla that you can easily whip up when you’re short on time.

Ingredients:

  • 1/2 yellow onion
  • 1/2 bell pepper
  • 1/2 teaspoon paprika
  • 1/2 teaspoon ground cumin
  • 1 1/2 cups Monterey Jack cheese
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1/4 pound large shrimp
  • salt
  • 2 10-inch flour tortillas
  • 2 tablespoons butter
  • 2 tablespoons olive oil

Instructions:

  1. Place a large skillet over medium heat. Pour the olive oil and heat until simmering. Add the bell pepper and onion and sauté, stirring occasionally for 6 minutes.
  2. Add the shrimp, garlic powder, onion powder, cumin, and paprika to the skillet and season with salt according to taste. Cook for about 4 minutes, until the shrimp turns pink.
  3. Place the mixture in a bowl and set aside. Wipe down the skillet and add 1 tablespoon of butter. Allow it to melt down before adding the tortilla to the skillet.
  4. Sprinkle half of the cheese on the tortilla, add the shrimp mixture, and then add the remainder of the cheese.
  5. Top it off with the second tortilla and spread the remaining butter on top. Cook until the bottom is golden and crisp.
  6. Flip the quesadilla and cook the uncooked tortilla until golden and crisp.
  7. Place on a cutting board and slice into wedges before serving.

Waffle makers are one of those kitchen gadgets that sound great to have in theory, but ultimately end up being used once before getting stuck in the back of the pantry to collect dust. Most of us just don’t want to eat waffles often enough that it feels worth investing in a device with only one use. If you’re on a fence about buying a waffle maker or have one you rarely break out, you may be pleasantly surprised to learn that they’re actually good for much more than regular waffles. Here are some alternative ways we like to use ours. 

Falafel

Falafel is a type of Middle Eastern fritter made of ground chickpeas, herbs, and spices. Like most fritters, it’s usually prepared in a ball or disc shape, but the way we see it, there’s no reason not to prepare your very own fa-waffle. Prepare your falafel mix of choice, then heat it in ¼ cup batches in a waffle maker for about 5 minutes or until golden brown.

Cinnamon Rolls

Topped with whipped cream and maple syrup, waffles can certainly make for a tasty dessert in their own right, but when we’re looking for something a bit more indulgent, we love using our waffle makers to prepare cinnamon rolls. Any brand of canned cinnamon rolls will do—just give your iron a spritz with some non-stick spray, then place one uncooked roll in each corner. Heat on medium for about 3 minutes, then serve with plenty of cream cheese icing.

Omelets

From scrambled to hard-boiled to sunny side up, there are few foods that can be prepared in as many forms as eggs, and we’re here today to suggest one more. Crack and beat two eggs in a bowl and whisk with your preferred seasonings, then pour the mixture into a greased waffle iron and heat for about 2 minutes. Carefully remove and serve as part of any breakfast spread.

By the time Wednesday comes around, many of us lack the energy or inclination to spend hours in the kitchen in the evening, producing a restaurant-worthy meal. Instead, reach for a recipe like this one, which promises to have a tasty and nutritious meal on the table in around half an hour.

Ingredients (to serve 4):

  • 4 chicken thighs, breasts legs
  • 2 leeks
  • 8 potatoes
  • 6 cloves of garlic
  • 3 tablespoons of olive oil
  • A handful of fresh tarragon
  • A handful of fresh basil
  • 2 tablespoons of cashew nuts, soaked
  • 2 tablespoons of water
  • 1 teaspoon of salt

Instructions:

  1. Peel and slice the potatoes into roughly 2 inch cubes. Parboil them for 6 minutes, then drain and leave to cool.
  2. Heat the oven to 400 degrees F. Brush the chicken pieces with some of the olive oil and slice the leeks into rounds about half an inch thick. Place these in a baking tray.
  3. In a food processor, whizz up 2 tablespoons of the olive oil with the herbs, cashew nuts, water and salt.
  4. Add the parboiled potatoes to the baking tray, drizzle over the remaining olive oil and then drizzle over the herb dressing.
  5. Pop in the oven and bake for 40 minutes, checking a few times that nothing is burning.

Seriously easy and extremely tasty, this tray bake is a great crowd-pleaser and an ideal mid-week dinner.

Ingredients:

  • 1 package of microwave rice (or fresh if you prefer)
  • 1 package of thinly sliced chicken breast cut into cubes
  • 1/4 cup cornstarch
  • 1/2 cup flour
  • 1 cup Corn flakes bread crumbs
  • 2 teaspoons of Siracha
  • 1 tablespoon of hot honey
  • 1 head of broccoli

Instructions:

  1. Heat a non stick frying pan with oil of choice.
  2. Fully coat the chicken in the hot honey, then coat with the cornstarch and flour.
  3. Once the oil is heated place your chicken in and fry on both sides for three minutes.
  4. Stir in siracha as you fry then add broccoli to cook with the chicken.
  5. Once chicken is cooked and broccoli is softened, transfer to a plate.
  6. Serve the chicken and broccoli over steamed white rice and enjoy!
