If you love seafood but you’re a little short on time, it can be difficult to find a quick and easy meal that will satisfy your cravings. Fear not, however, as there is a solution. Here is a quick and tasty shrimp quesadilla that you can easily whip up when you’re short on time.
Ingredients:
- 1/2 yellow onion
- 1/2 bell pepper
- 1/2 teaspoon paprika
- 1/2 teaspoon ground cumin
- 1 1/2 cups Monterey Jack cheese
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1/4 pound large shrimp
- salt
- 2 10-inch flour tortillas
- 2 tablespoons butter
- 2 tablespoons olive oil
Instructions:
- Place a large skillet over medium heat. Pour the olive oil and heat until simmering. Add the bell pepper and onion and sauté, stirring occasionally for 6 minutes.
- Add the shrimp, garlic powder, onion powder, cumin, and paprika to the skillet and season with salt according to taste. Cook for about 4 minutes, until the shrimp turns pink.
- Place the mixture in a bowl and set aside. Wipe down the skillet and add 1 tablespoon of butter. Allow it to melt down before adding the tortilla to the skillet.
- Sprinkle half of the cheese on the tortilla, add the shrimp mixture, and then add the remainder of the cheese.
- Top it off with the second tortilla and spread the remaining butter on top. Cook until the bottom is golden and crisp.
- Flip the quesadilla and cook the uncooked tortilla until golden and crisp.
- Place on a cutting board and slice into wedges before serving.
