A Quick and Tasty Shrimp Quesadilla for When You’re Short on Time

If you love seafood but you’re a little short on time, it can be difficult to find a quick and easy meal that will satisfy your cravings. Fear not, however, as there is a solution. Here is a quick and tasty shrimp quesadilla that you can easily whip up when you’re short on time.

Ingredients:

  • 1/2 yellow onion
  • 1/2 bell pepper
  • 1/2 teaspoon paprika
  • 1/2 teaspoon ground cumin
  • 1 1/2 cups Monterey Jack cheese
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1/4 pound large shrimp
  • salt
  • 2 10-inch flour tortillas
  • 2 tablespoons butter
  • 2 tablespoons olive oil

Instructions:

  1. Place a large skillet over medium heat. Pour the olive oil and heat until simmering. Add the bell pepper and onion and sauté, stirring occasionally for 6 minutes.
  2. Add the shrimp, garlic powder, onion powder, cumin, and paprika to the skillet and season with salt according to taste. Cook for about 4 minutes, until the shrimp turns pink.
  3. Place the mixture in a bowl and set aside. Wipe down the skillet and add 1 tablespoon of butter. Allow it to melt down before adding the tortilla to the skillet.
  4. Sprinkle half of the cheese on the tortilla, add the shrimp mixture, and then add the remainder of the cheese.
  5. Top it off with the second tortilla and spread the remaining butter on top. Cook until the bottom is golden and crisp.
  6. Flip the quesadilla and cook the uncooked tortilla until golden and crisp.
  7. Place on a cutting board and slice into wedges before serving.
