St. Patrick’s Day is just around the corner, and even if you’re not Irish, it can still be a great opportunity to engage in some festive baking. After all, what other holidays offer a ready-made excuse to binge on Lucky Charms? (And don’t get us started on the chocolatey goodness that is Baileys Irish Cream.) Here are some of the recipes we’ll be making this year. 

Irish Potato Candy

Don’t let the name fool you—these candies are not really Irish, and don’t contain any potato, but they are delicious, and that’s good enough for us. Brooklyn Farm Girl pays tribute to one of Ireland’s most important crops by shaping a mixture of cream cheese, coconut, and powdered sugar into bite-sized candy “spuds” before rolling them in cinnamon to create the “peel.”

Lucky Charms Frosted Sugar Cookies

Give your sugar cookies a seasonal spin with this recipe by Jenna from Butternut Bakery. Starting with soft and fluffy bakery-style cookies, she adds a rich layer of homemade vanilla buttercream before topping it all off with a handful of Lucky Charms cereal. Baileys Irish Cream Chocolate Pudding

Baileys is a cream-based whiskey liquor that has been produced in Ireland since the 1970s. Enjoy it on its own, or as dessert after a traditional Irish meal of corned beef and cabbage.

With Thanksgiving, Christmas, and New Year’s Eve behind us, it’s easy to fall into a mid-winter funk. After all, the holidays are a time of togetherness and celebration, and there’s a lot less to look forward to on this side of the calendar. To add a little color to the cold, dark days and show our loved ones how much we care, we like to surprise them with some homemade Valentine’s Day treats. Here are a few we’ll be making this year. 

Raspberry Cream Cheese Heart Tarts

Sweet tarts for your sweet heart. For breakfast, dessert, or just because, this recipe by Weelicious is a fun and simple way to say “I love you” through food—even if you’re someone who can barely boil an egg. Made with store-bought frozen pie dough and just a few other simple ingredients, they’re easy to whip up in just 30 minutes, though you’d never know from the way they taste.

Chocolate-Covered Strawberry Cupcakes

Chocolate-covered berries are a Valentine’s Day classic, but this recipe by Sally’s Baking Addiction puts a fun spin on the treat by turning it into fudgy chocolate cupcakes. A strawberry buttercream filling provides a nice tang to balance things out, while a homemade chocolate ganache and fresh strawberries on top tie it all together. 

Pink Hot Chocolate

When it’s cold outside, there’s nothing quite like cozying up on the couch with your other-half over some good-old-fashioned hot chocolate, but on the day of love, we like to prepare this Valentine’s Day version for an extra-romantic touch. For those of you who are die-hard peppermint and chocolate fans, this one is for you. If you have some candy canes left over and want to make a treat for the new year, this one is perfect. It is a quick treat that will likely be a hit at a holiday party, family get-together, or a midnight snack. With just a few ingredients and a short prep time, this treat is a no-brainer. Keep reading for this quick and easy recipe!

Ingredients

  • 12 ounces of both semisweet and white chocolate, chopped
  • 8 candy canes, crushed
  • ½ tsp peppermint extract

Instructions

  • Line a baking sheet with parchment paper.
  • Fill the bottom of a large pot with water and boil. Place a heatproof bowl on top of the
    pot.
  • Add the semisweet chocolate and stir occasionally until melted.
  • Add peppermint extract and stir again.
  • Pour the melted chocolate onto the lined baking sheet spread with a spatula.
  • Let set in the refrigerator for about 20 minutes.
  • Using the same boiling pot of water, place another heatproof bowl over top, add white
    chocolate, and stir until melted.
  • Pour over set semisweet chocolate and immediately top with crushed candy canes.
  • Refrigerate for another 20 minutes.
  • Once set, break up until satisfied and enjoy!

Empanadas are a fried, doughy treat that is commonly made and consumed in countries such as Spain, Argentina, and the Philippines. They can be filled either with sweet or savory ingredients and are the perfect snack on the go!

World Baking Day: May 19th

Baking has its world celebration day on the nineteenth of May, a day in which we should all dedicate some time to baking one of our favorite treats! From cakes to breads, use your imagination and make something absolutely to die for on this day.

BLUEBERRY CRUMB CAKE 🍰 I could NOT stop eating this grain free + refined sugar free deliciousness last night. It’s like a crumb cake meets a gooey berry cobbler and my mind just melted. Ev and I ate half the pan in less than 20 minutes 😂 . I saw this recipe by @inagarten and knew I had to give it the @beachsidekitchen twist. So I swapped white flour for almond flour (more fiber + protein), swapped sour cream for Greek Yogurt (dat protein), used a little less butter and swapped in coconut sugar. It’s not quite as sweet or fluffy as hers looks, but DAMN it hits the freakin spot! . . BLUEBERRY CRUMB CAKE For the streusel: 1/2 cup coconut sugar 1 teaspoon cinnamon 1/8 teaspoon nutmeg 4 tbs unsalted butter, melted 3/4 cups almond flour 1 tbs coconut flour. . For the cake: 6 tbs butter, softened 3/4 cup coconut sugar 2 eggs 1 tsp vanilla extract 1/2 tsp grated lemon zest 2/3 cup Greek yogurt 1 1/4 cups almond flour 1 tsp baking powder 1/4 tsp baking soda Pinch of salt 1 cup fresh blueberries . Directions Heat oven to 350. Mix together streusel ingredients and set aside. For cake: In a bowl, cream together butter and sugar. Add eggs and stir until incorporated. Add vanilla extract, lemon zest, and Greek yogurt. Then add dry ingredients. Last, fold in the blueberries. Pour batter into a lined 8×8 baking tin or round 9 inch pan. Crumble the streusel topping evenly over cake batter. Bake for 40-55 minutes or until cooked through (I always err on the side of under baked personally). Let cool completely, then enjoy!

A fresh batch of gingerbread cookies on the table makes it clear that holidays are here and brings a fresh dose of joy to every home. Here are a few tips for foolproof gingerbread cookies.

Softened Butter

If you like your gingerbread cookies soft, make sure to use softened butter, not melted butter. Just remember to take it out of the fridge the day before making the cookies and it will be ready!

Experiment with Spices

Gingerbread cookies are typically made with ginger, cinnamon, and cloves, but you can definitely experiment with spices and their amounts and make your own unique flavor.

Chill the Dough

It’s crucial to chill the dough after mixing it. The dough needs to be firm or your cookies will lose shape while baking. And that would be a really sad thing, especially if you made some special shapes with molds.

Store in Jars

After you’ve followed all the steps and got your perfect cookies, store them in containers that close well, like jars with lids for up to a week. That is, if they survive that long.

Delicious cocktails are one of the best things about the Christmas holidays, and we’ve finally reached the time of the year when we can drink as many as we want without feeling guilty about it. Deciding which cocktail to make for your friends and family can be tough, though, so it’s a good idea to have a proven recipe or two you can use when you’re out of ideas. Save this recipe for spicy rhubarb and cream cocktail for such occasions and try it as soon as you get the chance; we promise you’ll love it!

Ingredients

  • Rhubarb gin, 40ml
  • Half & half, 75ml
  • Egg white from 1 egg
  • Clove
  • Nutmeg
  • Cinnamon

Instructions

  1. Grate some nutmeg and clove and put in the fridge for anywhere between three and 48 hours.
  2. Put all the ingredients except cinnamon in a shaker.
  3. Shake until you get a smooth cocktail, then strain into glasses.
  4. Use cinnamon to decorate.

  • Half & half, 75ml
  • Egg white from 1 egg
  • Clove
  • Nutmeg
  • Cinnamon

Instructions

  1. Grate some nutmeg and clove and put in the fridge for anywhere between three and 48 hours.
  2. Put all the ingredients except cinnamon in a shaker.
  3. Shake until you get a smooth cocktail, then strain into glasses.
  4. Use cinnamon to decorate.
