Shucking Oysters

Shucking oysters requires a little skill and the right tool—an oyster knife. Here’s how to do it:

  1. Hold the oyster in a folded kitchen towel with the flat side up and the hinge exposed.
  2. Insert the knife into the hinge at a 45-degree angle, and wiggle it until you feel it pop open.
  3. Slide the knife along the inside of the upper shell to sever the muscle holding it closed.
  4. Remove the top shell, and then carefully loosen the oyster from the bottom shell, taking care not to spill the liquor (the natural juice inside the oyster).
