Make Farro the Star of Your Next Lunch

Farro is becoming one of the most popular grains at the moment, and for good reason! There is way more protein in it than conventional rice, and it’s very easy to cook and flavor. Since it’s a grain, you also don’t have to worry if it sits out for a bit, which is perfect for an on-the-go lunch. 

Here’s a fool-proof how to prepare farro. Who knows, you make enjoy it more than rice.

Ingredients:

  • 2 cups of farro 
  • Salt to taste
  • Optional: 1 onion or shallot, 3 cloves of garlic, 1 leek, 1 bay leaf

Instructions:

  1. First, toast the farro in a dry skillet over medium heat until they smell nutty about 5-10 minutes.
  2. Then, bring a pot of water to boil. If you want the farro to be extra flavorful, add in an onion that’s been quartered, or a shallot, smash a few garlic cloves, half a leek, and a bay leaf. No matter what you decide to add in, make sure to salt the water as you would pasta water. 
  3. Once the farro is toasted, add it into the boiling water and cook until al dente. Make sure to taste it around 15 or 20 minutes in and decide from there if it’s ready; it could take up to 30 minutes. 
  4. Then, drain it, toss the aromatics, and let it dry in a single layer on a sheet tray.  
  5. Use it in your favorite bowls, salads, and more!
