Chicken thighs are one of the best cuts of chicken because they have tons of flavor and fat. IF you want to make a really finger-licking good chicken dish, this is the one for you.
First, chop up the cloves of garlic into a fine mince, or use a garlic press.
Mix together the olive oil, soy sauce, honey, garlic, ginger, and pepper in a large bowl so it’s all well combined.
Put the chicken into the bowl and coat well in the marinade.
Marinade for anywhere from 30 minutes to 6 hours.
After the chicken has been marinating, put it onto a baking sheet or into a dish in a single layer and bake for 25 minutes, skin up, in a 425 F oven.
Flip the chicken and cook for another 10 minutes. Finally, flip the chicken again, cook for about 10 minutes or until the skin is crispy and a meat thermometer reads 165 F.
Take it out of the oven, let it rest for 5 minutes, and then serve and enjoy!
