Salads are an amazing meal choice. They’re so versatile and you can combine incredible ingredients to produce dishes with delicious flavor profiles. They’re especially perfect in summer, when there are more fresh salad ingredients available and the hot weather leaves us wanting lighter, fresher meals. This bean salad is a perfect example of this, while still being hearty enough to give you a good energy boost. This recipe serves 4.
Ingredients:
- 1.5 cups edamame beans
- 1 can of black beans
- 2 cups cherry tomatoes
- 1 red onion
- 2 avocados
- 1.5 cups sweet corn
- ½ cup fresh cilantro
- Juice of 1 small lime
- 1 clove garlic
- 2 tablespoons extra virgin olive oil
- Salt and pepper, to taste
Instructions:
- Finely slice the red onion. Halve the cherry tomatoes.
- Drain and rinse the black beans and add to a large salad bowl.
- Add the edamame beans, tomatoes, onion, and sweet corn.
- Roughly chop or tear the cilantro leaves into the salad bowl.
- Add some salt and pepper to your taste and give everything a good stir.
- In a small bowl, mix the lime juice with the olive oil. Crush the garlic into the bowl and stir well.
- Pour this dressing over the salad and mix throughout. Leave to stand for 5 minutes.
- Slice the avocados in half, destone them, dice the insides, scoop it out, and add to the salad bowl.
- Give everything a good mix and then divide into bowls to serve.
