This Simple Dinner is Healthy and Quick

On dark weeknights, often we want food on the table as quickly and as easily as possible. It’s a bonus if that food is healthy, especially as the winter time is when we are more likely to get coughs and colds. Check out this delicious, simple chickpea and sweet potato dish, which will be ready in under half an hour and provides at least two portions of fruit and vegetables.

Sweet Potato And Chickpeas Fry

Ingredients (to serve 2):

  • 2 large sweet potatoes
  • 1 tin of chickpeas
  • 1 white onion
  • 2 tablespoons of oil
  • 1 teaspoon of mustard seeds
  • 1 teaspoon of nigella seeds
  • 1 teaspoon of salt
  • 1 teaspoon of ground black pepper
  • 1 tablespoon of tomato puree

Instructions:

  1. Heat the oil in a large pan.
  2. Finely slice the onion and cube the sweet potatoes.
  3. Add them to the pan and stir well, cook for 10 minutes.
  4. Add the tin of chickpeas, with half of their water, to the pan.
  5. Simmer for another 10 minutes.
  6. Add the herbs and spices to the pan, stir through well.
  7. Add the tomato puree.
  8. Cook for a further 10 minutes, then remove from the heat and serve.

Quick, healthy, and delicious, this is the stuff that all dinners should be made of. You can boost the protein by serving with a fried egg, or some halloumi if you wish.
