Dahl is one of the best meals out there for warming you up on a cold winter’s day. Why not combine it’s soothing powers with those of soup, another great winter dish? This recipe is flavorful, comforting and hearty.
Dahl Soup
Ingredients (to serve 2):
- 1/3 cup of red lentils, soaked for at least 4 hours
- 1 red onion
- 1 small piece of ginger
- 2 garlic cloves
- 1 red chilli
- 1/2 cup of coconut milk
- 1/2 cup of water
- 2 teaspoons of garam masala
- 1 teaspoon of nigella seeds
- 1/2 tin of tomatoes
- 2 tablespoons of oil
Instructions:
- Heat 1 tablespoon of oil in a pan. Add the nigella seeds and garam masala, stir well and cook for 2 minutes.
- Add the sliced onion and cook for 10 minutes.
- Add the sliced ginger, chilli and garlic. Add the other tablespoon of oil.
- Cook for a further 10 minutes, then add the coconut milk, tomatoes and water. Add the drained red lentils to the pan.
- Cook on a low to medium heat for 20 minutes, then serve immediately.
To boost the nutritional profile of this soup, you could add shredded greens or spinach. It’s a lovely bowl of comforting, warming goodness, so try the recipe next time it’s dark, cold and stormy outside.
