Try These Easy Vegan Butter Chickpeas

Vegan Butter Chickpeas is a tasty meal you can easily prepare, even when you have a busy day. Just throw in all the ingredients in a slow cooker, and you’ll have a perfectly healthy and delicious meal after a few hours.

Ingredients

  • 1 tsp coconut oil or vegan butter
  • 1 yellow onion diced
  • 3 cloves garlic minced
  • 1 tbsp fresh ginger minced
  • 1 can diced tomatoes
  • 1 can chickpeas drained and rinsed
  • 1 can coconut milk
  • 1 tbsp garam masala
  • 1 tsp ground coriander
  • 1 tsp ground turmeric
  • 1 tsp chili flakes (can be omitted)
  • 1/2 tsp salt
  • 1/2 tsp pepper

Instructions

  1. Melt coconut oil in a small pan.
  2. Sauté diced onion, minced garlic and minced ginger in coconut oil until translucent.
  3. Transfer onion, garlic and ginger mixture to Crock-Pot 6 Qt. Cook & Carry Programmable Slow Cooker. Add all remaining ingredients and set to 4 hours on high.
  4. After 4 hours, serve with rice, naan or simply on its own and enjoy!
