Vegan Butter Chickpeas is a tasty meal you can easily prepare, even when you have a busy day. Just throw in all the ingredients in a slow cooker, and you’ll have a perfectly healthy and delicious meal after a few hours.
Ingredients
- 1 tsp coconut oil or vegan butter
- 1 yellow onion diced
- 3 cloves garlic minced
- 1 tbsp fresh ginger minced
- 1 can diced tomatoes
- 1 can chickpeas drained and rinsed
- 1 can coconut milk
- 1 tbsp garam masala
- 1 tsp ground coriander
- 1 tsp ground turmeric
- 1 tsp chili flakes (can be omitted)
- 1/2 tsp salt
- 1/2 tsp pepper
Instructions
- Melt coconut oil in a small pan.
- Sauté diced onion, minced garlic and minced ginger in coconut oil until translucent.
- Transfer onion, garlic and ginger mixture to Crock-Pot 6 Qt. Cook & Carry Programmable Slow Cooker. Add all remaining ingredients and set to 4 hours on high.
- After 4 hours, serve with rice, naan or simply on its own and enjoy!
