There is nothing better than pancakes for breakfast. You can have them in so many different ways and never get bored. This recipe for ricotta pancakes takes just half an hour. You will get 8 delicious pancakes, which you could combine with your favorite fruit, maple syrup, powdered sugar and more. It’s a very simple solution when you don’t have too much time but you want to try something new.
Ingredients
- 1 tablespoon baking powder
- 3/4 c whole milk
- 1 teaspoon pure vanilla extract
- 1 1/2 c all-purpose flour
- 1/2 c ricotta
- juice and zest of 1 lemon
- 2 tablespoons granulated sugar
- butter
- 1 teaspoon kosher salt
- 2 large eggs
- powdered sugar
- maple syrup
Instructions
Combine the baking powder, salt, flour, and sugar and mix all these ingredients together.
Use a second bowl to mix the ricotta and mills. Next, add the eggs, one by one. Pour in the lemon juice, vanilla extract, and zest as well.
You can now combine the ingredients from the two bowls.
Use a nonstick pan to melt the butter. Set the heat to medium-low to make the ricotta pancakes. Cook each pancake for 3 minutes per side.
When you’re done with the batter, decorate the pancakes with maple syrup and powdered sugar.
