Ingredients:
- 1 pound chicken breasts (boneless and skinless)
- 1 cup buttermilk
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 ½ cups all-purpose flour
- 1 teaspoon baking powder
- 1 ½ cups breadcrumbs
- vegetable oil
Instructions:
- Cut the chicken breasts into bite-sized pieces.
- Combine buttermilk, garlic powder, onion powder, paprika, salt, and pepper in a bowl. Mix until combined.
- Add chicken pieces to the buttermilk mixture. Cover the bowl with plastic wrap and pop it in the fridge for at least an hour.
- Combine all-purpose flour and baking powder in a bowl. Take another bowl and pour in the breadcrumbs.
- Pour 2 inches of oil into a large pot and preheat it to 350F.
- Take the chicken pieces out of the refrigerator. Coat each piece in flour and baking powder mixture and then roll them in breadcrumbs.
- Lower the chicken pieces into the preheated oil. Use smaller batches so the pot doesn’t get overcrowded.
- Fry the chicken pieces for about five minutes until they get golden brown.
- Place the popcorn chicken on a rack or paper towel to remove the excess oil.
- Serve with your favorite dip and dig in!
