Although it is best to soak dried beans overnight before cooking, sometimes life and cooking needs to be faster than that. With quick soaking, the time needed to soak and cook dried beans will be reduced to just about two hours. Read on for a fast(er) way to have beautifully cooked dried beans!

The Soak

Start by choosing your bean and adding it to a pot, preferably a dutch oven or something with a heavy bottom. Fill the pot with cold water to cover the beans with two inches of water and put the lid on. Bring the beans to a boil and then shut off the heat, allowing the beans to soak in the boiled water for 1 hour.

Cooking

Once the soaking is done, you can move onto the cooking. Fill the pot with lots of fresh water, along with aromatics like carrots, celery, onions, garlic, and herbs. Bring to a boil again this time without the lid and then down to a steady simmer for about 45 minutes or until they’re soft.

Now that the beans are cooked, you can use them in anything from dips, to soups, to vegetarian patties so enjoy your quicker-than-ever soaked and cooked dried beans!
