Vegan “Tuna” Salad for Meatless Monday

If you’re looking for a great meal for Meatless Monday, or you’re just trying to cut down on your consumption of animal products, this chickpea version of tuna salad has all the crunch and heartiness of the original.

You won’t miss the fish with this dish, we promise, and because it’s so quick and easy to make, it’s likely to appear on your table more than once And a great thing about this meal is that you’ll probably have all the ingredients on hand. Let’s get mixing.

Ingredients

  • 2 cups chickpeas
  • ½ cup diced celery
  • ¼ cup diced red onion
  • 1 teaspoon salt
  • 2 tablespoons vegan mayonnaise
  • juice of one small lemon
  • parsley for garnish
  • Salt and pepper

Method

  1. Combine the chickpeas, 1 teaspoon salt, lemon juice, and the vegan mayonnaise in a medium-sized bowl.
  2. Take a potato masher, and mash the chickpea mixture until the chickpeas are cracked but not mushy. Stir to ensure that everything is well-combined.
  3. Add the chopped celery and the diced onion, and mix all ingredients until they are well combined.
  4. Sprinkle with salt and pepper, and chopped parsley.
  5. Serve on or with multi-grain bread for a healthy, satisfying meal.
