Soup is one of the most comforting foods you can find and it will help to keep you warm this winter. This combination of sprouts, broccoli, and cabbage makes for a very savory and earthy vegetable soup. Here is a recipe for how to make it, but you can adapt it to add or remove any vegetables that you fancy.
Ingredients
- 2 cups of brussel sprouts
- Half a broccoli (include the stem!)
- Half a cabbage
- 5 cloves of garlic
- 1 leek
- 1 vegetable stock cube
- Dried thyme
- 1 tablespoon of olive oil
- Salt
- Black pepper
- Juice of half a freshly squeezed lemon
Instructions
- Chop up your leek and cook in your olive oil in a large saucepan. Fry on a low heat for 10 minutes before adding your garlic. Add a vegetable stock cube and 2 cups of water. Add a generous pinch of salt at this point.
- Chop up your broccoli, cabbage, and sprouts and add to your pan. You may need to add more water at this point.
- Add your dried thyme and allow to cook for a further 10 minutes to reduce some of the water. You can add black pepper and your lemon juice at this point. ONce your soup has simmered for a while and all your vegetables are cooked, blend with a hand blender.
- Your soup is ready to serve! If you want to add more creaminess, you can add some single cream. Add more salt and black pepper if required, and enjoy!
