Upgrade Your Breakfast With This Mozzarella Omelet

Eating eggs for breakfast is a great source of protein. But the same scramble or omelet can get boring. To keep things interesting, why not try this simple mozzarella upgrade? You’ll love this gourmet twist. 

Ingredients

  • 2 large eggs
  • 1/2 cup of shredded mozzarella cheese
  • Salt and pepper to taste
  • 1 tablespoon of olive oil or butter
  • Optional fillings: diced tomatoes, spinach, onions, or herbs like basil or parsley

Instructions

  1. Heat the olive oil or butter in a non-stick skillet over medium heat. Sprinkle the shredded mozzarella cheese on the pan. Cook until melted but check to make sure it’s not burning. 
  2. Once the cheese is nice and gooey, crack the eggs on top. Sprinkle salt and pepper to taste and add any other fillings on top. 
  3. Cover the omelet with a lid and let it cook on medium-low heat until the egg has set. 
  4. Once the egg has set, remove the lid and gently fold one side of the omelet over the other with your spatula. Let it cook for another minute to ensure the filling is cooked through. Carefully slide the omelet onto a plate.
  5. For a final touch, you can garnish the omelet with additional herbs or a sprinkle of cheese.
