French Onion Soup is a very simple dish in its basic ingredients but it is absolutely delicious and just what you need on a cold day. Serve with crusty bread for dipping, this recipe will bring you joy every time.

Ingredients

  • 6 white onions
  • 6 cloves of garlic
  • 4 cups of beef stock
  • 2 cups of unsalted butter
  • 2 tablespoons of olive oil
  • 1 teaspoon of brown sugar
  • A splash of white wine
  • 1 teaspoon of dried thyme
  • 3 cups of Gruyere or cheddar cheese
  • Crusty bread
  • Salt
  • Black pepper

Instructions

  1. In a large saucepan, melt your butter and add your onions, chopped into crescents. Cook on a very low heat for at least 30 minutes with the lid on, stirring occasionally. Once they have browned and caramelised, add your sugar to add even more flavor. Add your garlic and cook for a few minutes.
  2. Add a splash of white wine and deglaze your saucepan by using a spatula to pick up any sticky bits of onion that are at the bottom of the pan. Pour in your beef broth and add your salt, black pepper, and dried thyme.
  3. Gently boil your soup for about 20 minutes. Once it has simmered for a while, you can remove it from the heat. Pour your soup into a bowl, grate your cheese onto your soup and put in the oven to broil for about 10 minutes to melt your cheese. Serve with crusty bread and enjoy!
