3 Cold Soups You Can Make in the Blender

Easy recipes are a lifesaver when you want something healthy and homemade, but don’t want to spend hours at the stove. These three cold soup recipes are a great option for just those scenarios. 

Chilled Cucumber Avocado Soup

  • 2 large cucumbers, peeled and chopped
  • 1 ripe avocado, peeled and pitted
  • 1/2 cup Greek yogurt
  • 1 clove garlic, minced
  • 2 tablespoons fresh dill
  • 2 tablespoons fresh lime juice
  • 1 1/2 cups vegetable broth
  • Salt and pepper to taste

In the blender, combine all ingredients until smooth. Season with salt and pepper. Chill in the refrigerator before serving.

Gazpacho

  • 4 large tomatoes, chopped
  • 1 cucumber, peeled and chopped
  • 1 bell pepper, chopped
  • 1 red onion, chopped
  • 2 cloves garlic
  • 1/4 cup red wine vinegar
  • 1/4 cup olive oil
  • 2 cups tomato juice
  • Salt and cayenne pepper to taste

Place tomatoes, cucumber, bell pepper, red onion, and garlic in the blender. Add remaining ingredients. Blend until smooth. Season with salt and a pinch of cayenne pepper. Enjoy!

Watermelon Mint Soup

  • 4 cups seedless watermelon
  • 1/4 cup fresh mint leaves
  • 1 tablespoon lime juice
  • 1 tablespoon honey
  • 1/4 cup coconut water

Blend watermelon, mint, lime juice, honey, and coconut water. Garnished with mint leaves and enjoy. You could even serve it out of the watermelon rind!
