Soup is one of the easiest and tastiest homecooked meals you can make, but in summer a hearty, hot soup is often not desired. However, there are plenty of refreshing cold soups to try instead. This gazpacho is light and fresh and ideal for a hot, summer day. This soup pairs perfectly with crusty bread and you could make a bean salad for a high-protein side. This recipe provides four to six servings.

Ingredients:

  • 2 lb large vine tomatoes
  • 2 cucumbers
  • 3 bell peppers (any color)
  • 1 large red onion
  • 3 cloves garlic
  • ½ cup extra virgin olive oil
  • 2 tablespoons white wine vinegar
  • Salt and pepper, to taste

Instructions:

  1. Peel the cucumbers and chop them into quarters.
  2. Chop the peppers in half and remove the core and seeds. 
  3. Chop the tomatoes in half and remove the cores. 
  4. Remove the skin from the onion and garlic, and chop the onion into quarters. 
  5. Add all the ingredients to a food processor and blend until smooth.
  6. It’s your choice how smooth you make it—some people prefer a slightly chunky gazpacho while others enjoy it completely smooth.
  7. Once it has reached your desired consistency, transfer it to a suitable container and place it in the fridge for 2-3 hours. 
  8. Remove from the fridge and transfer to bowls ready for serving.

If you love lemon cake, then this recipe is a must-try. It uses olive oil instead of butter which results in a super moist and heavy cake that is so lemony and delicious. This cake is very simple to make but has very delicious results and goes perfectly with a cup of tea or coffee. 

Ingredients:

  • 1 cup plain flour
  • 1 teaspoon baking powder
  • ¾ cup caster sugar
  • ½ cup extra virgin olive oil 
  • 2 eggs 
  • Juice of 2 lemons 

Instructions:

  1. Preheat the oven to 360℉.
  2. Sift the flour and the baking powder into a large mixing bowl.
  3. Add the sugar and mix together.
  4. Pour the olive oil and lemon juice in and stir well until everything is well combined.
  5. Crack the eggs into the bowl and whisk them into the mixture.
  6. Line a cake tin with greaseproof paper.
  7. Transfer the cake mixture to the tin and then pop it in the oven for 25-30 minutes.
  8. You can check whether it’s cooked in the middle by sticking a knife in and checking it comes out clean.
  9. Once the cake is ready to come out of the oven, sprinkle some caster sugar over the top while it’s still hot.
  10. Leave to cool for 10-15 minutes before serving.

Coffee is a huge part of so many people’s morning routine. There are so many different ways to have coffee and lots of people have a personal preference. If you want to get into making proper coffee at home, here is a rundown of some of the different options available to help you decide which to try out. 

Cafetiere

Also known as a French press, this option is great for making proper coffee and is useful when wanting large quantities. You’ll need to wait for it to brew and they can be a pain to clean up, but the result is delicious and there’s no waste from filter papers. 

Percolator 

This method produces incredible coffee but does take some time and attention. The coffee grounds are placed in the compartment in the middle of the percolator with water in the bottom. This is then placed on the hob to bubble the water into the coffee. You need to pay close attention, so this isn’t ideal if you are preoccupied. 

Aero-Press

This fairly new process uses a device that creates a vacuum to push the coffee through a filter paper. This option is great if you want delicious coffee quickly and with no mess. Once filtered through you can simply push the coffee grounds out straight into the compost.

Tiffin is one of the tastiest, most indulgent chocolatey treats but is so easy to make. It’s also really simple to make it entirely vegan, so if you want a dairy-free chocolate sweet treat then this recipe is perfect. Always double-check that dark chocolate and plain cookies or crackers are vegan. These tiffin bars will keep in the fridge for up to one week after making them.

Ingredients:

(Serves 12)

  • 10 ounces dark chocolate
  • 8 ounces plain cookies or crackers
  • 1 cup raisins
  • ¼ cup coconut oil 
  • ¼ cup maple syrup

Instructions:

  1. Smash the crackers up into small pieces and place them into a large bowl.
  2. Break the chocolate into pieces and place in a heatproof bowl.
  3. Place the bowl over a pan of bubbling water on the stove.
  4. Add the coconut oil and maple syrup to the chocolate and gently stir over the hot water until they are completely melted.
  5. Pour this mixture into the bowl with the crackers in and then add the raisins.
  6. Give it all a good stir until thoroughly mixed.
  7. Line a baking tray with greaseproof paper.
  8. Transfer the mixture to the baking tray and spread out into an even layer.
  9. Leave to cool completely, and then place in the fridge for 2-3 hours.
  10. Remove from the fridge and slice into 12 bars.

Ingredients

(Makes 8 bars)

  • 1 cup pitted dates
  • 1 cup pecans 
  • 1 cup oats
  • ¼ cup nut butter 
  • ½ teaspoon nutmeg
  • ¼ teaspoon sea salt
  • ¼ cup flax seeds

Instructions:

  1. Start by roughly chopping the dates and the pecans – it’s up to you how large you want to leave the pieces of each depending on what texture you’d prefer for the bars.
  2. Add them to a large bowl along with the oats, nutmeg, salt, and flax seeds.
  3. Mix thoroughly together.
  4. Add the nut butter – choose whichever you would prefer, any will work well in this recipe.
  5. Stir this through the mixture until it’s all well combined.
  6. The texture should be soft and sticky but not runny – if it’s become runny then add a few more oats, and if it’s not soft enough then add a little more nut butter or a splash of water.
  7. When you’ve reached the desired consistency, divide the mixture into 8 balls.
  8. Roll each ball into a bar shape.
  9. Line a tray with greaseproof paper and place the bars on top.
  10. Pop in the fridge for 3 hours, until the bars are set.
  11. Remove from the fridge 30 minutes before serving, and enjoy!

These enchiladas require some preparation but are well worth the effort. The beans and sweet corn become super tasty and tender and make for the perfect filling, and the homemade tomato sauce brings it together. This recipe is perfect for entertaining a crowd.

Ingredients:

(Serves 4)

  • 1 can red kidney beans
  • 1 can black beans
  • 1 can sweet corn
  • 1 can chopped tomatoes
  • 1 cup veg stock
  • 2 large white onions
  • 5 cloves garlic
  • 1 tablespoon cumin
  • 1 tablespoon smoked paprika
  • 1 tablespoon coriander
  • 1 tablespoon oregano
  • 4 tortilla wraps
  • Shredded vegan cheese (optional)

Instructions:

  1. Finely slice the onions and garlic
  2. Heat some oil in a large pot and add half the onions 
  3. Fry for 10 minutes, then add half the garlic, some salt and pepper, and half of all the dried spices and herbs and fry for a further 10 minutes
  4. Add the beans and sweet corn to the pan, fry for a further 10 minutes, and then place on one side
  5. Heat some oil in another pot and add the rest of the onion
  6. Fry for 10 minutes, then add some salt and pepper and the rest of the garlic, spices, and herbs
  7. Add the chopped tomatoes and veg stock and increase the heat
  8. Leave to simmer for 10-15 minutes, stirring regularly
  9. Meanwhile, preheat the oven to 350℉
  10. Divide the bean mix between the tortilla wraps, roll them up, and place in an oven dish
  11. Pour over the tomato sauce and sprinkle over some vegan cheese if desired
  12. Place in the oven for 15-20 minutes
  13. Serve hot with some guacamole

  4. Crack the eggs into the bowl and beat into the mixture.
  5. Add the desiccated coconut and dried cranberries and mix until evenly spread. 
  6. Line a large baking tray with greaseproof paper.
  7. Using your hands divide the mixture into evenly sized balls until you have 12.
  8. Place them on the baking tray ensuring they have enough space to spread.
  9. Place in the oven for 15-18 minutes, ensuring they’re cooked all the way through.
  10. Transfer to a cooling rack and leave to cool for 10 minutes before enjoying.

Coffee is a huge part of so many people’s morning routine. There are so many different ways to have coffee and lots of people have a personal preference. If you want to get into making proper coffee at home, here is a rundown of some of the different options available to help you decide which to try out. 

Cafetiere

Also known as a French press, this option is great for making proper coffee and is useful when wanting large quantities. You’ll need to wait for it to brew and they can be a pain to clean up, but the result is delicious and there’s no waste from filter papers. 

Percolator 

This method produces incredible coffee but does take some time and attention. The coffee grounds are placed in the compartment in the middle of the percolator with water in the bottom. This is then placed on the hob to bubble the water into the coffee. You need to pay close attention, so this isn’t ideal if you are preoccupied. 

Aero-Press

This fairly new process uses a device that creates a vacuum to push the coffee through a filter paper. This option is great if you want delicious coffee quickly and with no mess. Once filtered through you can simply push the coffee grounds out straight into the compost.

Tiffin is one of the tastiest, most indulgent chocolatey treats but is so easy to make. It’s also really simple to make it entirely vegan, so if you want a dairy-free chocolate sweet treat then this recipe is perfect. Always double-check that dark chocolate and plain cookies or crackers are vegan. These tiffin bars will keep in the fridge for up to one week after making them.

Ingredients:

(Serves 12)

  • 10 ounces dark chocolate
  • 8 ounces plain cookies or crackers
  • 1 cup raisins
  • ¼ cup coconut oil 
  • ¼ cup maple syrup

Instructions:

  1. Smash the crackers up into small pieces and place them into a large bowl.
  2. Break the chocolate into pieces and place in a heatproof bowl.
  3. Place the bowl over a pan of bubbling water on the stove.
  4. Add the coconut oil and maple syrup to the chocolate and gently stir over the hot water until they are completely melted.
  5. Pour this mixture into the bowl with the crackers in and then add the raisins.
  6. Give it all a good stir until thoroughly mixed.
  7. Line a baking tray with greaseproof paper.
  8. Transfer the mixture to the baking tray and spread out into an even layer.
  9. Leave to cool completely, and then place in the fridge for 2-3 hours.
  10. Remove from the fridge and slice into 12 bars.

Dates and pecans are incredible ingredients to have around, as they both taste super indulgent but are really healthy. Using them to make energy bars is ideal as they complement each other’s flavors well and will provide you with a great energy boost. They can be stored in the fridge for up to 1 week. 

Ingredients

(Makes 8 bars)

  • 1 cup pitted dates
  • 1 cup pecans 
  • 1 cup oats
  • ¼ cup nut butter 
  • ½ teaspoon nutmeg
  • ¼ teaspoon sea salt
  • ¼ cup flax seeds

Instructions:

  1. Start by roughly chopping the dates and the pecans – it’s up to you how large you want to leave the pieces of each depending on what texture you’d prefer for the bars.
  2. Add them to a large bowl along with the oats, nutmeg, salt, and flax seeds.
  3. Mix thoroughly together.
  4. Add the nut butter – choose whichever you would prefer, any will work well in this recipe.
  5. Stir this through the mixture until it’s all well combined.
  6. The texture should be soft and sticky but not runny – if it’s become runny then add a few more oats, and if it’s not soft enough then add a little more nut butter or a splash of water.
  7. When you’ve reached the desired consistency, divide the mixture into 8 balls.
  8. Roll each ball into a bar shape.
  9. Line a tray with greaseproof paper and place the bars on top.
  10. Pop in the fridge for 3 hours, until the bars are set.
  11. Remove from the fridge 30 minutes before serving, and enjoy!

These enchiladas require some preparation but are well worth the effort. The beans and sweet corn become super tasty and tender and make for the perfect filling, and the homemade tomato sauce brings it together. This recipe is perfect for entertaining a crowd.

Ingredients:

(Serves 4)

  • 1 can red kidney beans
  • 1 can black beans
  • 1 can sweet corn
  • 1 can chopped tomatoes
  • 1 cup veg stock
  • 2 large white onions
  • 5 cloves garlic
  • 1 tablespoon cumin
  • 1 tablespoon smoked paprika
  • 1 tablespoon coriander
  • 1 tablespoon oregano
  • 4 tortilla wraps
  • Shredded vegan cheese (optional)

Instructions:

  1. Finely slice the onions and garlic
  2. Heat some oil in a large pot and add half the onions 
  3. Fry for 10 minutes, then add half the garlic, some salt and pepper, and half of all the dried spices and herbs and fry for a further 10 minutes
  4. Add the beans and sweet corn to the pan, fry for a further 10 minutes, and then place on one side
  5. Heat some oil in another pot and add the rest of the onion
  6. Fry for 10 minutes, then add some salt and pepper and the rest of the garlic, spices, and herbs
  7. Add the chopped tomatoes and veg stock and increase the heat
  8. Leave to simmer for 10-15 minutes, stirring regularly
  9. Meanwhile, preheat the oven to 350℉
  10. Divide the bean mix between the tortilla wraps, roll them up, and place in an oven dish
  11. Pour over the tomato sauce and sprinkle over some vegan cheese if desired
  12. Place in the oven for 15-20 minutes
  13. Serve hot with some guacamole

This recipe uses desiccated coconut and dried cranberries for a super sweet, indulgent, and satisfying cookie. Once cooled these cookies can be stored in an airtight container for up to 1 week. 

Ingredients:

(Makes 12 cookies)

  • 2 cups plain flour
  • 1 cup caster sugar
  • 3 eggs
  • ¼ cup butter
  • 1 teaspoon bicarbonate of soda
  • 1 cup desiccated coconut
  • 1 cup dried cranberries

Instructions:

  1. Preheat oven to 360℉.
  2. Sift the flour and bicarbonate of soda into a large mixing bowl.
  3. Add the sugar and the butter and mix until completely combined.
  4. Crack the eggs into the bowl and beat into the mixture.
  5. Add the desiccated coconut and dried cranberries and mix until evenly spread. 
  6. Line a large baking tray with greaseproof paper.
  7. Using your hands divide the mixture into evenly sized balls until you have 12.
  8. Place them on the baking tray ensuring they have enough space to spread.
  9. Place in the oven for 15-18 minutes, ensuring they’re cooked all the way through.
  10. Transfer to a cooling rack and leave to cool for 10 minutes before enjoying.
