Vegetarian alternatives can be a bit dull. So often at barbeques, the offering may be a bean burger or a fake meat burger made from soya. While these can be super tasty, it does get boring after a while. This recipe uses portobello mushrooms as a burger patty for a super succulent and rich flavor and topped with halloumi for even more deliciousness and some extra protein. This recipe is for four burgers. 

Ingredients:

  • 4 large portobello mushrooms
  • 5 ounces halloumi
  • Salt and pepper, to taste
  • 1 teaspoon dried thyme
  • 1 tablespoon extra virgin olive oil
  • 1 small red onion 
  • 1 large beef tomato
  • 4 iceberg lettuce leaves
  • 4 tablespoons mayonnaise
  • 1 cloves garlic
  • 4 burger buns

Instructions:

  1. Place the mayonnaise in a bowl and crush the garlic clove into it. Mix well then set aside.
  2. Finely slice the onion into rings and the tomato into discs. 
  3. Remove the stalks from the mushrooms and brush clean. Drizzle each mushroom with the extra virgin olive oil and sprinkle with some salt, pepper, and thyme. 
  4. Use your hands to rub the seasoning in, and then place the mushrooms under a grill on a medium heat, cooking for 5-10 minutes on each side.
  5. Meanwhile, slice the halloumi into 4 and place into an oiled pan. Gently fry for a few minutes on each side, until golden brown. 
  6. Slice each burger bun in half and dollop some garlic mayonnaise on each side. Add a lettuce leaf, a slice of tomato, and some onion.
  7. Place each mushroom into a burger bun and top with a slice of halloumi and the top of the bun, ready to serve.

Homemade cookies are unparalleled in their deliciousness. There are so many ways to make them and exciting flavor variations to try. This recipe uses desiccated coconut and dried cranberries for a super sweet, indulgent, and satisfying cookie. Once cooled these cookies can be stored in an airtight container for up to one week. 

Ingredients:

(Makes 12 cookies)

  • 2 cups plain flour
  • 1 cup caster sugar
  • 3 eggs
  • ¼ cup butter
  • 1 teaspoon bicarbonate of soda
  • 1 cup desiccated coconut
  • 1 cup dried cranberries

Instructions:

  1. Preheat oven to 360℉.
  2. Sift the flour and bicarbonate of soda into a large mixing bowl.
  3. Add the sugar and the butter and mix until completely combined.
  4. Crack the eggs into the bowl and beat into the mixture.
  5. Add the desiccated coconut and dried cranberries and mix until evenly spread. 
  6. Line a large baking tray with greaseproof paper.
  7. Using your hands divide the mixture into evenly sized balls until you have 12.
  8. Place them on the baking tray ensuring they have enough space to spread.
  9. Place in the oven for 15-18 minutes, ensuring they’re cooked all the way through.
  10. Transfer to a cooling rack and leave to cool for 10 minutes before enjoying.

It’s also really simple to make it entirely vegan, so if you want a dairy-free chocolate sweet treat then this recipe is perfect. Ingredients:

  • 10 ounces dark chocolate
  • 8 ounces plain cookies or crackers
  • 1 cup raisins
  • ¼ cup coconut oil 
  • ¼ cup maple syrup

Instructions:

  1. Smash the crackers up into small pieces and place them into a large bowl.
  2. Break the chocolate into pieces and place in a heatproof bowl.
  3. Place the bowl over a pan of bubbling water on the stove.
  4. Add the coconut oil and maple syrup to the chocolate and gently stir over the hot water until they are completely melted.
  5. Pour this mixture into the bowl with the crackers in and then add the raisins.
  6. Give it all a good stir until thoroughly mixed.
  7. Line a baking tray with greaseproof paper.
  8. Transfer the mixture to the baking tray and spread out into an even layer.
  9. Leave to cool completely, and then place in the fridge for 2-3 hours.
  10. Remove from the fridge and slice into 12 bars.

Ingredients:

  • 4 chicken breasts
  • 3 cups button mushrooms
  • 1 large white onion
  • 4 cloves garlic
  • 14 ounces of ready-rolled pastry
  • 2 cups milk
  • 1 tablespoon plain flour
  • 1 tablespoon olive oil
  • 1 tablespoon dried thyme
  • 1/4 teaspoon ground nutmeg
  • Salt and pepper, to taste

Instructions:

  1. Preheat the oven to 350 F.
  2. Finely slice the onion. Chop the mushrooms into small slices.
  3. Dice the chicken breasts.
  4. Heat oil in a large pot and add the chicken breasts. Once they’ve turned white on the outside, add the onion.
  5. Fry for 10 minutes and then add the mushrooms, thyme, salt, and pepper. After 5 minutes crush the garlic cloves into the pot and continue to fry on a low heat.
  6. Meanwhile, make the white sauce.
  7. Heat the tablespoon of oil in a non-stick pan and add the flour. Mix to form a paste.
  8. Gently pour the milk into the pan, add the nutmeg, and increase the heat.
  9. Simmer while stirring constantly for 10-15 minutes, until it starts to thicken.
  10. Pour the white sauce into the chicken pan and leave to gently simmer.
  11. Cut the pastry to fit your pie dish and then line the dish with the pastry.
  12. Transfer the pie mixture to the dish, and cover it with a pastry lid.
  13. Place in the oven for 30-40 minutes, until the pastry is nicely browned.
  14. Leave to stand for 5 minutes before serving.

Lasagne is one of the best comfort foods. Rich tomato sauce paired with creamy, cheesy sauce and pasta is truly a match made in heaven. As a vegetarian, you don’t have to miss out on this exquisite meal and this hearty recipe is full of healthy veggies. Serves 6.

Ingredients:

  • Lasagne sheets
  • 2 cups dried red lentils
  • 2 large white onions
  • 4 cloves garlic
  • 1 large zucchini
  • 2 large carrots
  • 2 bell peppers, any color
  • 1 cup veg stock
  • 2 cans chopped tomatoes
  • 2 cups milk
  • 2 cups shredded cheese
  • 1 teaspoon mustard
  • 1 tablespoon plain flour
  • 1 tablespoon oil
  • 1 tablespoon dried oregano
  • 1 tablespoon dried basil
  • 1 teaspoon smoked paprika
  • Salt and pepper, to taste

Instructions:

  1. Finely slice the onion and mince the garlic. Chop the zucchini, carrots, and bell peppers into bite-sized chunks. 
  2. Heat some oil in a large pot. Add the onion and carrots and gently fry for 10 minutes. 
  3. Add the zucchini, bell peppers, oregano, basil, and paprika, and fry for a further 10 minutes.
  4. Add the garlic, lentils, some salt and pepper, and fry for a further 5 minutes. 
  5. Pour in the chopped tomatoes and veg stock and increase the heat. Leave to simmer for 20 minutes, stirring occasionally. 
  6. Meanwhile, make the white sauce by heating the tablespoon of oil in a non-stick pan. Add the flour and stir into a paste.
  7. Pour in the milk and increase the heat. Stir constantly while it simmers until it starts to thicken up. Stir in the mustard and cheese and season to taste.
  8. Preheat the oven to 350℉.
  9. Assemble the lasagne by putting a layer of the red sauce, then the white sauce, and then lasagne sheets for 2 rounds. Top with white sauce and some shredded cheese. 
  10. Place in the oven for 30-40 minutes, until the top is browned.
  11. Leave to stand for 5-10 minutes before serving.

If you’re craving a decadent sweet treat but don’t want to put the oven on, then these no-bake slices are perfect. Not only are they super quick and easy to make, but they are also much healthier than other sweets. You will need a food processor or a high-powered blender. This recipe serves 10.

Ingredients:

  • 2 cups dried pitted dates
  • 2 cups oats
  • 1 cup ground almonds
  • 1 cup walnuts 
  • 2 tablespoons nut butter
  • ¼ teaspoon salt
  • 3 ounces chocolate
  • 1 tablespoon coconut oil

Instructions:

  1. Add the oats to the food processor and blend for 3-5 minutes, until they have formed a fine flour. 
  2. Add three-quarters of the dates and blitz for another few minutes until a sticky mixture is formed. 
  3. Transfer this mixture to a large mixing bowl. 
  4. Roughly chop the walnuts and remaining dates and stir them into the mixture.
  5. Add the ground almonds, nut butter, and salt and mix until everything is thoroughly combined. 
  6. Using your hands, divide and mold the mixture into 10 bars. Place these on some baking paper on a tray. 
  7. Break the chocolate into smaller pieces and add to a heat-proof bowl along with the coconut oil.
  8. Put a pan of water onto the stove and bring to the boil. Place the heat-proof bowl on top and stir the chocolate until it’s entirely melted. 
  9. Dip each bar into the chocolate mixture and return to the tray, chocolate side up. 
  10. Leave to cool and then place in the fridge for 2-3 hours until the chocolate is set.

  • 3 zucchinis

  • 2 cups fresh basil
  • 2 scallions
  • 2 cloves garlic
  • 1/2 a lemon
  • 2 cups veg stock

Instructions:

These enchiladas require some preparation but are well worth the effort. The beans and sweet corn become super tasty and tender and make for the perfect filling, and the homemade tomato sauce brings it together. This recipe is perfect for entertaining a crowd.

Ingredients:

(Serves 4)

  • 1 can red kidney beans
  • 1 can black beans
  • 1 can sweet corn
  • 1 can chopped tomatoes
  • 1 cup veg stock
  • 2 large white onions
  • 5 cloves garlic
  • 1 tablespoon cumin
  • 1 tablespoon smoked paprika
  • 1 tablespoon coriander
  • 1 tablespoon oregano
  • 4 tortilla wraps
  • Shredded vegan cheese (optional)

Instructions:

  1. Finely slice the onions and garlic
  2. Heat some oil in a large pot and add half the onions 
  3. Fry for 10 minutes, then add half the garlic, some salt and pepper, and half of all the dried spices and herbs and fry for a further 10 minutes
  4. Add the beans and sweet corn to the pan, fry for a further 10 minutes, and then place on one side
  5. Heat some oil in another pot and add the rest of the onion
  6. Fry for 10 minutes, then add some salt and pepper and the rest of the garlic, spices, and herbs
  7. Add the chopped tomatoes and veg stock and increase the heat
  8. Leave to simmer for 10-15 minutes, stirring regularly
  9. Meanwhile, preheat the oven to 350℉
  10. Divide the bean mix between the tortilla wraps, roll them up, and place in an oven dish
  11. Pour over the tomato sauce and sprinkle over some vegan cheese if desired
  12. Place in the oven for 15-20 minutes
  13. Serve hot with some guacamole

Homemade cookies are unparalleled in their deliciousness. There are so many ways to make them and exciting flavor variations to try. This recipe uses desiccated coconut and dried cranberries for a super sweet, indulgent, and satisfying cookie. Once cooled these cookies can be stored in an airtight container for up to one week. 

Ingredients:

(Makes 12 cookies)

  • 2 cups plain flour
  • 1 cup caster sugar
  • 3 eggs
  • ¼ cup butter
  • 1 teaspoon bicarbonate of soda
  • 1 cup desiccated coconut
  • 1 cup dried cranberries

Instructions:

  1. Preheat oven to 360℉.
  2. Sift the flour and bicarbonate of soda into a large mixing bowl.
  3. Add the sugar and the butter and mix until completely combined.
  4. Crack the eggs into the bowl and beat into the mixture.
  5. Add the desiccated coconut and dried cranberries and mix until evenly spread. 
  6. Line a large baking tray with greaseproof paper.
  7. Using your hands divide the mixture into evenly sized balls until you have 12.
  8. Place them on the baking tray ensuring they have enough space to spread.
  9. Place in the oven for 15-18 minutes, ensuring they’re cooked all the way through.
  10. Transfer to a cooling rack and leave to cool for 10 minutes before enjoying.

Tiffin is one of the tastiest, most indulgent chocolatey treats but is so easy to make. It’s also really simple to make it entirely vegan, so if you want a dairy-free chocolate sweet treat then this recipe is perfect. Always double-check that dark chocolate and plain cookies or crackers are vegan. These tiffin bars will keep in the fridge for up to one week after making them.

Ingredients:

(Serves 12)

  • 10 ounces dark chocolate
  • 8 ounces plain cookies or crackers
  • 1 cup raisins
  • ¼ cup coconut oil 
  • ¼ cup maple syrup

Instructions:

  1. Smash the crackers up into small pieces and place them into a large bowl.
  2. Break the chocolate into pieces and place in a heatproof bowl.
  3. Place the bowl over a pan of bubbling water on the stove.
  4. Add the coconut oil and maple syrup to the chocolate and gently stir over the hot water until they are completely melted.
  5. Pour this mixture into the bowl with the crackers in and then add the raisins.
  6. Give it all a good stir until thoroughly mixed.
  7. Line a baking tray with greaseproof paper.
  8. Transfer the mixture to the baking tray and spread out into an even layer.
  9. Leave to cool completely, and then place in the fridge for 2-3 hours.
  10. Remove from the fridge and slice into 12 bars.

Pie is one of the best meal choices out there when you’re craving something hearty and comforting. It can be super simple to make, and this recipe couldn’t be easier. Using ready-made pastry saves so much time and effort but produces delicious results. Chicken and mushroom are a perfect pairing in this creamy pie. This recipe serves 6.

Ingredients:

  • 4 chicken breasts
  • 3 cups button mushrooms
  • 1 large white onion
  • 4 cloves garlic
  • 14 ounces of ready-rolled pastry
  • 2 cups milk
  • 1 tablespoon plain flour
  • 1 tablespoon olive oil
  • 1 tablespoon dried thyme
  • 1/4 teaspoon ground nutmeg
  • Salt and pepper, to taste

Instructions:

  1. Preheat the oven to 350 F.
  2. Finely slice the onion. Chop the mushrooms into small slices.
  3. Dice the chicken breasts.
  4. Heat oil in a large pot and add the chicken breasts. Once they’ve turned white on the outside, add the onion.
  5. Fry for 10 minutes and then add the mushrooms, thyme, salt, and pepper. After 5 minutes crush the garlic cloves into the pot and continue to fry on a low heat.
  6. Meanwhile, make the white sauce.
  7. Heat the tablespoon of oil in a non-stick pan and add the flour. Mix to form a paste.
  8. Gently pour the milk into the pan, add the nutmeg, and increase the heat.
  9. Simmer while stirring constantly for 10-15 minutes, until it starts to thicken.
  10. Pour the white sauce into the chicken pan and leave to gently simmer.
  11. Cut the pastry to fit your pie dish and then line the dish with the pastry.
  12. Transfer the pie mixture to the dish, and cover it with a pastry lid.
  13. Place in the oven for 30-40 minutes, until the pastry is nicely browned.
  14. Leave to stand for 5 minutes before serving.

Lasagne is one of the best comfort foods. Rich tomato sauce paired with creamy, cheesy sauce and pasta is truly a match made in heaven. As a vegetarian, you don’t have to miss out on this exquisite meal and this hearty recipe is full of healthy veggies. Serves 6.

Ingredients:

  • Lasagne sheets
  • 2 cups dried red lentils
  • 2 large white onions
  • 4 cloves garlic
  • 1 large zucchini
  • 2 large carrots
  • 2 bell peppers, any color
  • 1 cup veg stock
  • 2 cans chopped tomatoes
  • 2 cups milk
  • 2 cups shredded cheese
  • 1 teaspoon mustard
  • 1 tablespoon plain flour
  • 1 tablespoon oil
  • 1 tablespoon dried oregano
  • 1 tablespoon dried basil
  • 1 teaspoon smoked paprika
  • Salt and pepper, to taste

Instructions:

  1. Finely slice the onion and mince the garlic. Chop the zucchini, carrots, and bell peppers into bite-sized chunks. 
  2. Heat some oil in a large pot. Add the onion and carrots and gently fry for 10 minutes. 
  3. Add the zucchini, bell peppers, oregano, basil, and paprika, and fry for a further 10 minutes.
  4. Add the garlic, lentils, some salt and pepper, and fry for a further 5 minutes. 
  5. Pour in the chopped tomatoes and veg stock and increase the heat. Leave to simmer for 20 minutes, stirring occasionally. 
  6. Meanwhile, make the white sauce by heating the tablespoon of oil in a non-stick pan. Add the flour and stir into a paste.
  7. Pour in the milk and increase the heat. Stir constantly while it simmers until it starts to thicken up. Stir in the mustard and cheese and season to taste.
  8. Preheat the oven to 350℉.
  9. Assemble the lasagne by putting a layer of the red sauce, then the white sauce, and then lasagne sheets for 2 rounds. Top with white sauce and some shredded cheese. 
  10. Place in the oven for 30-40 minutes, until the top is browned.
  11. Leave to stand for 5-10 minutes before serving.

If you’re craving a decadent sweet treat but don’t want to put the oven on, then these no-bake slices are perfect. Not only are they super quick and easy to make, but they are also much healthier than other sweets. You will need a food processor or a high-powered blender. This recipe serves 10.

Ingredients:

  • 2 cups dried pitted dates
  • 2 cups oats
  • 1 cup ground almonds
  • 1 cup walnuts 
  • 2 tablespoons nut butter
  • ¼ teaspoon salt
  • 3 ounces chocolate
  • 1 tablespoon coconut oil

Instructions:

  1. Add the oats to the food processor and blend for 3-5 minutes, until they have formed a fine flour. 
  2. Add three-quarters of the dates and blitz for another few minutes until a sticky mixture is formed. 
  3. Transfer this mixture to a large mixing bowl. 
  4. Roughly chop the walnuts and remaining dates and stir them into the mixture.
  5. Add the ground almonds, nut butter, and salt and mix until everything is thoroughly combined. 
  6. Using your hands, divide and mold the mixture into 10 bars. Place these on some baking paper on a tray. 
  7. Break the chocolate into smaller pieces and add to a heat-proof bowl along with the coconut oil.
  8. Put a pan of water onto the stove and bring to the boil. Place the heat-proof bowl on top and stir the chocolate until it’s entirely melted. 
  9. Dip each bar into the chocolate mixture and return to the tray, chocolate side up. 
  10. Leave to cool and then place in the fridge for 2-3 hours until the chocolate is set.

Soup is most often associated with winter which makes perfect sense. Enjoying a comforting, soothing bowl of delicious soup is the perfect way to warm up and nourish your soul on a cold winter’s day. But that doesn’t mean soup has to only be consumed in winter, and there are plenty of exciting recipes that are perfect for spring or summer. This zucchini soup is a perfect balance of delicate, fresh vegetables with zingy, invigorating ingredients and pairs well with crusty bread. This recipe is vegan and serves 4.

Ingredients:

  • 3 zucchinis
  • 2 cups watercress
  • 2 cups fresh basil
  • 2 scallions
  • 2 cloves garlic
  • 1/2 a lemon
  • 2 cups veg stock
  • 1/2 tablespoon dried oregano
  • 1/2 tablespoon dried parsley
  • Salt and pepper, to taste

Instructions:

  1. Juice the lemon and remove any seeds.
  2. Chop the zucchini into discs. Slice the scallions up and mince the garlic.
  3. Heat some oil in a large pot and add the zucchini.
  4. Fry gently for 10 minutes and then add the scallions, garlic, orgenao, parsley, salt, and pepper.
  5. Fry for another 5-10 minutes and then add the watercress and basil.
  6. Stir through for a few minutes and then pour the veg stock in.
  7. Increase the heat and leave to simmer for 20 minutes.
  8. Remove from the heat and blitz using a stick blender.
  9. Return to the heat for a further 10 minutes before serving warm.

These enchiladas require some preparation but are well worth the effort. The beans and sweet corn become super tasty and tender and make for the perfect filling, and the homemade tomato sauce brings it together. This recipe is perfect for entertaining a crowd.

Ingredients:

(Serves 4)

  • 1 can red kidney beans
  • 1 can black beans
  • 1 can sweet corn
  • 1 can chopped tomatoes
  • 1 cup veg stock
  • 2 large white onions
  • 5 cloves garlic
  • 1 tablespoon cumin
  • 1 tablespoon smoked paprika
  • 1 tablespoon coriander
  • 1 tablespoon oregano
  • 4 tortilla wraps
  • Shredded vegan cheese (optional)

Instructions:

  1. Finely slice the onions and garlic
  2. Heat some oil in a large pot and add half the onions 
  3. Fry for 10 minutes, then add half the garlic, some salt and pepper, and half of all the dried spices and herbs and fry for a further 10 minutes
  4. Add the beans and sweet corn to the pan, fry for a further 10 minutes, and then place on one side
  5. Heat some oil in another pot and add the rest of the onion
  6. Fry for 10 minutes, then add some salt and pepper and the rest of the garlic, spices, and herbs
  7. Add the chopped tomatoes and veg stock and increase the heat
  8. Leave to simmer for 10-15 minutes, stirring regularly
  9. Meanwhile, preheat the oven to 350℉
  10. Divide the bean mix between the tortilla wraps, roll them up, and place in an oven dish
  11. Pour over the tomato sauce and sprinkle over some vegan cheese if desired
  12. Place in the oven for 15-20 minutes
  13. Serve hot with some guacamole
