Deliciously Healthy Date and Pecan Energy Bars

Dates and pecans are incredible ingredients to have around, as they both taste super indulgent but are really healthy. Using them to make energy bars is ideal as they complement each other’s flavors well and will provide you with a great energy boost. They can be stored in the fridge for up to 1 week. 

Ingredients

(Makes 8 bars)

  • 1 cup pitted dates
  • 1 cup pecans 
  • 1 cup oats
  • ¼ cup nut butter 
  • ½ teaspoon nutmeg
  • ¼ teaspoon sea salt
  • ¼ cup flax seeds

Instructions:

  1. Start by roughly chopping the dates and the pecans – it’s up to you how large you want to leave the pieces of each depending on what texture you’d prefer for the bars.
  2. Add them to a large bowl along with the oats, nutmeg, salt, and flax seeds.
  3. Mix thoroughly together.
  4. Add the nut butter – choose whichever you would prefer, any will work well in this recipe.
  5. Stir this through the mixture until it’s all well combined.
  6. The texture should be soft and sticky but not runny – if it’s become runny then add a few more oats, and if it’s not soft enough then add a little more nut butter or a splash of water.
  7. When you’ve reached the desired consistency, divide the mixture into 8 balls.
  8. Roll each ball into a bar shape.
  9. Line a tray with greaseproof paper and place the bars on top.
  10. Pop in the fridge for 3 hours, until the bars are set.
  11. Remove from the fridge 30 minutes before serving, and enjoy!
