CINNAMON APPLE PIE OVERNIGHT OATS
Ingredients:
Oats:
* 1 1/2 cups old-fashioned rolled oats
* 1 teaspoon ground flaxseeds
* 1 teaspoon ground cinnamon
* 1 teaspoon ready-mixed or homemade apple pie spice
* 1/2 – 1 tablespoon pure maple syrup
* 1/2 cup unsweetened applesauce
* 1 3/4 cups almond milk (or milk of your choice)
* 1/4 cup chopped apples
Caramelised Apple Topping:
* 1 large apple, chopped into 1/4 inch pieces
*1/2 tablespoon coconut oil
*1/2 tablespoon maple syrup
*1/2 teaspoon cinnamon
Toppings:
Pecans or walnuts.
Extra almond milk for serving is also optional.
Instructions:
For the Overnight Oats: Combine all the ingredients in a large resealable bowl or divide into mason jars or any other type of small resealable container in the order as they appear. Give it a good stir, cover with the lid, and place in the refrigerator overnight or at least 4-5 hours.
For the Apple Topping: In a small saucepan, heat coconut oil over medium-high heat. Add apples, maple syrup, and cinnamon and saute for about 5 minutes or until the apples turn golden brown and begin to soften. Remove from heat and set aside. (You can make this ahead of time and place in a covered container in the refrigerator).
When ready to eat, remove from the refrigerator and give the oats a good stir or shake and garnish with apple pie topping, add desired toppings on top.
ESPRESSO OVERNIGHT OATS (with Salted Date Caramel)
Ingredients:
* 1 cup rolled oats
* 1 tablespoon chia seeds
* 3/4 cup almond milk
* 1/2 cup strong cold press OR brewed coffee
* 2 tablespoons maple syrup
* 1 tablespoon vanilla extract
* 4 Medjool dates, pitted
* Pinch of salt
* Water
Instructions:
For the Overnight Oats: Mix all dry ingredients together in a large bowl. Add wet ingredients and mix again. Place in the refrigerator, covered, for at least 2 hours or overnight.
For the Date Caramel: Place 4 Medjool dates into a high-speed food processor. Process on high until pureed. Depending on how soft your dates are, you may need to add water. Add the 1/2 teaspoon.
BLUEBERRY PANCAKE OVERNIGHT OATS
Ingredients:
* 1 cup rolled oats
* 2 tablespoons ground flax meal
* 1 cup Almond almond milk
* 1/2 teaspoon butter extract (or 1 tablespoon butter)
* 3 tablespoons maple syrup (plus extra for optional drizzling)
* 1/4 cup pecan halves
* 1/2 cup blueberries
Instructions:
Mix together the oats, flax meal, almond milk, extract (or butter), and maple syrup together. Keep in an airtight container in your refrigerator overnight, or at least three hours. The next morning, stir in the pecans and blueberries and eat cold or warmed up.

Instructions:

Ingredients:
* 1 cup (2 sticks) butter
* 2¼ cups rolled oats
* 3 tablespoons all-purpose flour
* 2¼ cups light brown sugar, packed
* 1 egg, lightly beaten
* 1 teaspoon vanilla
* 1 teaspoon salt
Instructions:
1. Preheat oven to 375º F. Line baking sheets with parchment paper or silicone baking mats. Set aside.
2. Heat butter and brown sugar, over medium heat, stirring frequently until butter has melted and the mixture is smooth.
3. Add the oats, flour, salt, egg, and vanilla.
4. Drop cookie batter by the teaspoon onto prepared baking sheets, leaving at least 2 inches between each cookie to allow them to spread.
5. Bake for 5-7 minutes, watching closely to prevent them from over-baking.
The lace cookies should be golden brown.
6. Allow to cool on the cookie sheet for 30 seconds and remove onto racks to cool completely.
7. Store them in an airtight container.
You can also coat them with some melted chocolate. Yummy.

Ingredients:
* 5 banana’s, sliced
* 1/2 cup walnuts, chopped
* 28 gluten-free vanilla cookies
For the pudding:
* 3 whole eggs
* 1 egg yolk
* 27 ounces coconut milk
* 1/4 cup maple syrup
* 1 tsp cinnamon
* 1 vanilla bean
* 2 tbsp arrowroot starch
* A pinch of salt
For the whipped cream:
* 2-3 cups chilled coconut cream
* 1 tbsp grade A maple syrup
Instructions:
1. In a medium-sized saucepan, combine coconut milk and vanilla bean. Heat milk to almost boiling and then reduce to low.
2. In a separate bowl, whisk eggs, arrowroot, cinnamon, maple syrup and salt until well-combined.
3. Temper egg mixture by slowly pouring heated milk into the bowl while whisking continuously.
4. Once all is well-combined, add this mixture back to the saucepan over medium-low heat.
5. Whisk continuously until mixture thickens and remove and let cool before placing in the fridge to chill completely about 1 hour.
6. In the meanwhile, pour the two cans of coconut milk into a medium-sized bowl.
7. With a hand mixer, beat the cream until light and fluffy.
8. Add 1 tbsp maple syrup while beating cream. Set aside.
9. In the desired serving dish, layer ingredients in this order: pudding, cookies, bananas, whipped cream. Repeat this step until you’ve used all ingredients and whipped cream is the final topping.
10. Top with chopped walnuts and any remaining banana slices. Serve.
