Love BLTs but looking for a healthier take on the sandwich? Then we’ve got the perfect salad for you! This avocado BLT salad is creamy with mayo-marinated tomatoes, romaine lettuce, diced avocado, and bacon. If you miss the bun, you can always add some croutons.
Ingredients
- 12 slices lean, center-cut bacon, cooked and chopped
- 4 Roma tomatoes, chopped
- 1/4 cup light mayonnaise
- pinch Kosher salt
- 6 cups chopped romaine lettuce
- fresh black pepper to taste
- 1 medium avocado, diced
Instructions
- Combine the diced tomatoes, mayonnaise, salt, and fresh cracked pepper in a medium bowl and set it aside for 10 minutes. This will allow the tomatoes to release their juices for the dressing to your salad.
- Divide the lettuce and tomatoes onto four plates and top each plate with diced avocado and chopped bacon.
