Bran Muffins Can Be Your Healthy Breakfast Choice

Bran muffins take just 30 minutes to be done, and this recipe will leave you with 12 tasty muffins. It is on the healthy side, so feel free to have them for breakfast or as a snack.

Spare half an hour of your time, and you can feast on these muffins for a few days by keeping them in the fridge.


  • 1 large egg
  • 1 cup all-purpose flour
  • 1 1/2 cups 100% all-bran cereal
  • 2/3 cup brown sugar
  • 1 teaspoon baking powder
  • 1/3 cup melted coconut oil
  • 1 teaspoon baking soda
  • 1 cup buttermilk
  • 1/2 teaspoon salt
  • 1/2 teaspoon vanilla extract


  • Set the oven to 450 F degrees. Prepare a muffin tin for 12 muffins with paper cups or cooking spray.
  • Combine the buttermilk with bran cereal for 10 minutes. Let the cereal soak so that they become soft.
  • Mix the egg, brown sugar, baking soda, melted coconut oil, salt, baking powder, flour, and vanilla extract together. Pour this mixture into the buttermilk and cereal mix. Stir everything together.
  • Transfer the batter to the muffin tin and fill the cups almost to the top.
  • Bake the bran muffins for 5 minutes, then lower the heat to 350 F degrees, but don’t open the oven door. Let the muffins bake for 8 to 10 more minutes, then take the tin out of the oven.
