Risotto might carry a reputation for being fussy and labor-intensive, but the truth is, making a delicious asparagus risotto is much simpler than you might think. This classic Italian dish can be a straightforward and satisfying meal to prepare, even for beginners. Let’s jump into this asparagus variation.

Ingredients:

  • 1 bunch of fresh asparagus
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cups Arborio rice
  • 1/2 cup dry white wine
  • 6 cups chicken or vegetable broth, kept warm
  • 1/2 cup freshly grated Parmesan cheese
  • Salt and pepper to taste
  • Optional: lemon zest or juice for extra zing

Instructions:

  1. Trim the woody ends from the asparagus and cut into bite-sized pieces. Blanch in boiling water for 2-3 minutes until just tender. 
  2. In a large pan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent. 
  3. Add the rice to the pan and stir for 2 minutes. 
  4. Pour in the white wine and stir until the wine is mostly absorbed. 
  5. Begin adding the warm broth, one ladle at a time, stirring continuously. 
  6. When the rice is just tender and the risotto looks creamy (about 18-20 minutes of adding broth), stir in the blanched asparagus. Cook for 2-3 minutes.
  7. Remove from heat. Stir in the grated Parmesan cheese. Season with salt and pepper to taste.
  8. Serve immediately.

Ingredients:

  • One whole eggplant
  • 1 C cold water
  • 1 C sesame paste
  • Juice of half a lemon
  • 1/2 tsp sumac
  • 1/2 tsp of sweet paprika
  • 1/2 tsp of zaatar
  • Salt and pepper to taste
  • Handful of pomegranate seeds for garnish (optional)
  • Bunch of finely chopped parsley for garnish (optiional)
  • Pine nuts for garnish (optional)

Instructions

  1. Cut your eggplant in half and then cut into fourths without slicing too thin
  2. Line a greased parchment paper on a cookie sheet
  3. Roast in the oven on 425 degrees until fork tender
  4. Scoop out the insides and pat dry
  5. Prepare your tahini by mixing equal parts sesame paste and cold water, mix until smooth and creamy, but not too thick
  6. Add lemon juice to the mix and drizzle over the eggplant
  7. Add spices on top of the eggplants, salt and pepper to taste, and add desired garnish when you’re ready to serve
  8. Serve with kebabs or enjoy on its own!

Ingredients:

  • 1 pound flank steak, thinly sliced
  • 3 cups of broccoli florets
  • 2 tablespoons vegetable oil

Marinade and sauce:

  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • 2 teaspoons cornstarch
  • 1/2 cup beef broth
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 tablespoon brown sugar
  • 2 teaspoons cornstarch

Instructions:

  1. In a bowl, combine the soy sauce, 1 teaspoon of cornstarch, and sesame oil. Add the thinly sliced beef and let it marinate for 15 minutes.
  2. Blanch the broccoli for about 2 minutes.
  3. In a separate bowl, mix the beef broth, remaining soy sauce, oyster sauce, brown sugar, minced garlic, grated ginger, and 2 teaspoons of cornstarch. 
  4. Heat 1 tablespoon of vegetable oil in your wok. Add the beef. Stir-fry until the beef is just cooked through. Add the remaining oil and the broccoli. 
  5. Stir-fry for a couple of minutes, then add the beef back in.
  6. Pour the sauce over the beef and broccoli. Stir well to combine.
  7. Serve hot with rice.

  • 1 package (10-12) rice paper wrappers
  • 4 ounces vermicelli rice noodles
  • 1 carrot, julienned
  • 1 cucumber, julienned
  • 1 red bell pepper, julienned
  • 1 cup shredded red cabbage
  • 1 avocado, sliced into thin strips
  • 1 bunch fresh mint leaves, torn
  • 1 bunch fresh cilantro leaves, torn

Instructions:

  1. Cook the vermicelli noodles according to package instructions. Drain and rinse under cold water to prevent sticking.

  4. Scoop out the insides and pat dry
  5. Prepare your tahini by mixing equal parts sesame paste and cold water, mix until smooth and creamy, but not too thick
  6. Add lemon juice to the mix and drizzle over the eggplant
  7. Add spices on top of the eggplants, salt and pepper to taste, and add desired garnish when you’re ready to serve
  8. Serve with kebabs or enjoy on its own!

Instructions:

  1. Cook pasta according to the package instructions until al dente. Save about 1 cup of pasta water for later, then drain the rest and set the pasta aside.
  2. While the pasta cooks, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté until fragrant.
  3. Pour in the heavy cream and bring to a simmer. Let it cook for about 2 minutes, then stir in the grated Parmesan cheese until melted and smooth.

A wok is a secret weapon for whipping up quick, healthy, and delicious dinners. With just one pan and a handful of ingredients, you can create a myriad of dishes that cater to any taste. Here’s a delicious beef and broccoli recipe to get you started.

Ingredients:

  • 1 pound flank steak, thinly sliced
  • 3 cups of broccoli florets
  • 2 tablespoons vegetable oil

Marinade and sauce:

  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • 2 teaspoons cornstarch
  • 1/2 cup beef broth
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 tablespoon brown sugar
  • 2 teaspoons cornstarch

Instructions:

  1. In a bowl, combine the soy sauce, 1 teaspoon of cornstarch, and sesame oil. Add the thinly sliced beef and let it marinate for 15 minutes.
  2. Blanch the broccoli for about 2 minutes.
  3. In a separate bowl, mix the beef broth, remaining soy sauce, oyster sauce, brown sugar, minced garlic, grated ginger, and 2 teaspoons of cornstarch. 
  4. Heat 1 tablespoon of vegetable oil in your wok. Add the beef. Stir-fry until the beef is just cooked through. Add the remaining oil and the broccoli. 
  5. Stir-fry for a couple of minutes, then add the beef back in.
  6. Pour the sauce over the beef and broccoli. Stir well to combine.
  7. Serve hot with rice.

For the Teriyaki Sauce:

  • 1/2 cup soy sauce
  • 1/4 cup water
  • 2 tablespoons sweet rice wine (mirin)
  • 1/4 cup brown sugar
  • 1 clove garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1 tablespoon cornstarch dissolved in 2 tablespoons water

Instructions:

  1. Slice chicken into strips, season with salt and pepper, and coat first in flour, then beaten eggs, and lastly in panko breadcrumbs for crispiness. 
  2. Fry in hot oil until golden, about 3-4 minutes per side, then drain. 
  3. Simmer soy sauce, water, mirin, sugar, garlic, and ginger. Thicken with cornstarch mixture. 
  4. Coat fried chicken in sauce, garnish with sesame seeds and green onions to serve.

Spring rolls are a popular Asian dish, often served as an appetizer or light meal. But traditional spring rolls can be deep-fried and loaded with heavy sauces. This recipe offers a healthier and easier alternative, perfect for a light and refreshing spring or summer meal. Let’s jump in. 

Ingredients:

  • 1 package (10-12) rice paper wrappers
  • 4 ounces vermicelli rice noodles
  • 1 carrot, julienned
  • 1 cucumber, julienned
  • 1 red bell pepper, julienned
  • 1 cup shredded red cabbage
  • 1 avocado, sliced into thin strips
  • 1 bunch fresh mint leaves, torn
  • 1 bunch fresh cilantro leaves, torn

Instructions:

  1. Cook the vermicelli noodles according to package instructions. Drain and rinse under cold water to prevent sticking.
  2. In a large bowl, combine the julienned carrot, cucumber, bell pepper, red cabbage, avocado slices, mint leaves, and cilantro leaves. Add the cooked and cooled noodles and toss gently to combine.
  3. Soften rice paper in warm water for 10-15 seconds.
  4. Place a small amount of the filling in the center of the wrapper, closer to the bottom edge. Fold the bottom over the filling, then side, and roll tightly.
  5. Repeat steps 4 and 5 with the remaining wrappers and filling.
  6. Serve the spring rolls with the peanut sauce for dipping.

Yogurt at breakfast

Yogurt is an easy way to get a huge helping of protein in your meal. Having some with your porridge, or just with some fruit, is a great way to start the day. Protein helps you feel fuller for longer, so if you often find yourself hungry not long after breakfast, then adding some yogurt into the mix will help avoid this.

Choose a legume as your side

They are high in vitamins so will give you the same health kick as some broccoli, but have the added benefit of being high in protein. For example, you could have some roasted chickpeas as a side, or some mashed butterbeans. 

Have nuts as an afternoon snack

Ingredients

  • 1 slice cooked bacon
  • 1/4 cup shredded cheddar
  • 2 large eggs
  • 2 tablespoons water
  • 1/2 avocado

Instructions

  1. Place two mason jar lids in a medium nonstick pan with the centers removed. Spray the pan with cooking spray and place over medium heat. Then, crack the eggs into the center of the lids.
  2. Use a fork to poke the yolks and mix them up with the egg whites. Cook them through for about 3 minutes, until the whites are cooked through. Remove the lid and top one egg with cheddar.
  3. Cook for another minute until the cheese is melting. Place the one egg bun onto a plate and add the bacon and avocado before topping with the other egg.
